About and visit notes
### Introduction / Overview: Bridging East Coast Tradition with California Flair
For California residents seeking an authentic, high-quality bagel experience that transcends the standard morning routine, Boil & Bake stands out as the premier destination in Orange County. Located in the heart of Costa Mesa, this exceptional establishment is far more than just a typical Bagel shop; it is a dedicated "California deli of sorts," specializing in the traditional craft of bagel making combined with a fresh, seasonal, and locally-sourced approach that defines California cuisine.
The name itself, Boil & Bake, is a testament to the commitment to authenticity. Unlike many shortcuts, Boil & Bake employs the classic, time-honored method of naturally leavened dough, first boiling the bagels to create a signature chewy interior and then baking them for a perfect, crispy exterior. This dedication to craft results in bagels that customers enthusiastically describe as "perfection" and "the best bagel ever."
Boil & Bake’s appeal lies in its menu that expertly merges classic New York deli staples with a California sensibility. Alongside favorites like *The New Yorker*, which features soft scramble, New School American Cheese, and Thiccc Cut Nueske Bacon, the menu boasts unique, California-centric creations like *The Garden* and *The Heirloom*, utilizing high-quality local produce from purveyors like Valdivia Farms. This unique blend of East Coast soul and West Coast freshness makes Boil & Bake an absolute must-try for any local food enthusiast.

### What is Worth Choosing: The Unmistakable Quality and Flavor
For any Southern California local deciding where to invest their time and taste buds for a quality breakfast or lunch, choosing Boil & Bake is a decision for uncompromising quality and authentic flavor. What makes this establishment truly worth choosing?
The primary reason is the Superior Product Quality. The commitment to the traditional "Boil & Bake" method is a rarity in the region, guaranteeing a textural perfection—that ideal crispy crust and dense, chewy inside—that simply cannot be replicated by steam-baked bagels. This foundation of quality ensures that every sandwich, from the simple *Plain Jane* to the decadent *Fully Loaded Lox*, starts with the best possible base.
Secondly, the Gourmet, California-Inspired Toppings. Boil & Bake excels by using high-end, often locally-sourced ingredients. Customers are not just getting deli standards; they are experiencing house-cured fish, fresh Valdivia Farms produce, and unique spreads like *Scallion Chive Cream Cheese*. The flavor combinations are hailed as "out of this world," making even the brief wait in line worthwhile.
Finally, the Exceptional Experience and Service. The combination of a welcoming vibe, friendly staff, and the convenience of modern amenities like full accessibility and multiple payment options provides a stress-free experience. Boil & Bake is described as the kind of place you’ll find yourself "coming back to again and again," making it the clear, authoritative choice for the best, most artisanal bagel experience in Costa Mesa and, arguably, all of Orange County.

Sep 14 · Mr.RabbitBoil & Bake is a solid bagel spot with California flair. Be prepared to wait at least half an hour outside before you are able to enter because this is a very popular spot.I ordered the Santa Monica because I wanted a sandwich with salmon lox. I waited about 10-15 minutes for my sandwich to be made. It was tasty and delicious. It was priced reasonably as well.I can see why this is a local favourite. It is worth a 30-minute wait in line.
Aug 3 · Kelley LeBest bagel I've had. And I've been to New York a few times. Just give this place a try. So so good. Ratios were spot on. They NEED a location in San Diego next.
Sep 5 · Rebecca RaoufpurI don't think there is a more aesthetically pleasing bagel than this place offers. We talked to the chef owner and love the story behind the sourcing (putting in effort to get local heirloom tomatoes). I found the bagels a bit too hard but with all the toppings it was really delicious.
