About and visit notes

For over three decades, Breadsmith of Milwaukee has been a beloved fixture on the city's East Side, a place where the simple, wholesome tradition of baking is honored daily. Founded right here in Milwaukee in 1993, this bakery, located on Downer Avenue, is the very original location of a brand that has since expanded to share its "old-world values in a new world" philosophy across the nation. For Wisconsin locals, this is where the story began, and it remains a cherished source for exceptional artisan bread and delightful sweets.

Breadsmith specializes in European-style loaves, which are characterized by a satisfyingly crisp crust and a moist, flavorful interior. The commitment to quality is uncompromising: every loaf is made from scratch, shaped by hand, and baked without the use of additives or preservatives. The cornerstone of their process is their massive, five-ton, European hearth stone oven. This oven, with its steam injection system, is what gives the French, Ciabatta, and Rustic Italian breads their distinctive, award-winning crust and texture.

While the brand has grown, the Downer Avenue location retains its strong community focus, serving both retail customers who drop in for a daily loaf or a treat, and providing essential wholesale bakery services to local Milwaukee restaurants, caterers, and grocery stores. The result is a vibrant, aromatic space where you can witness the time-honored craft of baking firsthand. From the classic Sourdough, made with a starter dating back to the bakery's founding year, to seasonally rotating specialty breads and sweets, Breadsmith offers a delicious commitment to the way bread ought to be.

The bakery’s extensive daily and weekly rotating menu ensures that there is always something new to try, while staples like the French Peasant bread—an award-winner praised by Bon Appétit magazine—remain consistently available. This dedication to both tradition and variety solidifies Breadsmith of Milwaukee's status as an essential stop for high-quality, fresh-baked goods in Wisconsin.

What is Worth Choosing Breadsmith

Choosing Breadsmith of Milwaukee is an investment in authenticity and a tradition that started right here in our state. For Wisconsin families and culinary enthusiasts, the dedication to European-style artisan bread is the primary draw. The flavor and texture achieved by baking on a stone hearth, the use of a decades-old sourdough starter, and the commitment to making every loaf by hand elevate the products far beyond standard commercial fare. The French Peasant, the dense, caraway-scented Traditional Rye, and the crusty Ciabatta are indispensable for quality home cooking, sandwich making, and entertaining.

Furthermore, selecting Breadsmith means supporting a business with deep ties to the Milwaukee community. By providing wholesale services, they enrich the menus of many other local establishments, and their substantial daily food donation programs demonstrate a genuine commitment to social responsibility. While some customer feedback points to occasional, though notable, operational and quality control issues (such as delayed openings or isolated product flaws), these are widely considered infrequent setbacks in a bakery known for its high standards and decades of consistent, high-volume production.

If your priority is honest, additive-free, and traditionally-made bread that has earned national praise and carries a genuine piece of Milwaukee history, Breadsmith on Downer Avenue is an essential destination. It provides both the daily necessities (like soft, versatile sandwich loaves) and the impressive specialty items (like the buttery Cinnamon Cobblestone) that truly celebrate the craft of baking.

We found a hair baked into the bread. Super disappointing and unsanitary. We could literally see it sticking out the bottom of the bread when it was flipped over so it was obviously not checked. Purchased on 5/22 at 5:30pm- unfortunately didn’t see until after it was too late to return and the store was closed.

I’ve been to the Breadsmith a handful of times, and there have been twice now that the opening worker has been late. Such a bad look for a professional business. Both times that I was here promptly at seven, the place has not been open. I have now been sitting for ten minutes this morning waiting and still no service or sign of someone to open the store. I came before work and I’m going to have to leave with nothing, for the second time.

Delicious! The French peasant bread is our breakfast go-to for toast. Fairly priced for bakery bread.

Outstanding breads at a really great price point. Always have tasted very fresh. They have a style of a sort of more baked outer layer, that isn't hard, and just perfectly chewy. Not sure what that's called or a better way to describe it, but it's really great, and you should try them if you haven't.

Google mistakenly had their closing time an hour later but when I called the woman working still let me in to purchase two loaves. Incredibly nice considering she had no obligation. Fantastic service and great bread.UPDATE (4/9/2020): Still great service! They are still being amazing purveyors of bread, even through this COVID-19 pandemic. I especially appreciate the gentleman behind the counter (never caught his name). He has always been patient with me when I can't make a decision on the type of bread. If the owners are reading this, he deserves a raise!
