I can't remember what they are called (pan de Pina¿). It is the size and shape of a cupcake and it's hollowed. I think the "cupcake" is baked first then has its inside removed. Pineapple fills the hole and is capped with a cross. The top is brushed with something to make it shiny when finished. These are by far my FAVORITE pastries (pan). Not many bakeries offer them and when they do it's like only once a week. I know of one other baker located in Culver City that makes them on Friday. I first went to Huicho's on a Sunday during a Ciclavia Ciclamini and didn't see them but I bought a variety of pan to sample. I was in the neighborhood on a Wednesday and to my surprise there they were. I bought 6 - ate 1 that day - froze the rest. Mmm Mmm Good! - Kristine Kennedy-Higdon (nurptiz)
