In my opinion there wasn't enough filling and thus, it lacked the robust almond flavor. The croissant itself was okay, though it lacked crispiness and flakiness and some buttery flavor. I'm always amazed by the presentation of their baked products, but very disappointed when I bite into them and taste them. They lack flavor and depth and are very much overpriced and this has consistent with all my dining experiences here.Drinks: today the drinks were great. Usually the coffee, espresso and cappuccinos are the reason for my visits and honestly, they are the best part of my dining experiences at this establishment. They always are consistent and delicious.Service: service today was slow. I waited about five minutes to have my order taken, with only one person in front of me in the line. For the last four visits this has been the case, although I waited much longer. In my opinion, staff at the register need to multi-task more and be more efficient with their use of time.Atmosphere: this is a great location inside and outside of the establishment. More tables outside would be wonderful, though that's only really needed on busy days.About me: I'm a trained and experienced baker and chef. I spent over thirty years working in the culinary industry, with twelve of those years as a professional baker. I love to eat good food, especially at establishments who enjoy bringing their guests a great dining experience. May 11 · Jedediah PoppWonderful little cafe just north of downtown Brattleboro. It is worth the effort to head out of town and find them. The baked goods are hand-made from pure ingredients. You can taste the love and attention to detail. The cafe interior is a little dark, but has a cozy feel. The service was great. We'll be back soon!
June 29 · Rebecca RobbinsI hate to speak ill of a new business but these croissants were a big letdown. I'm adding pictures so you can see the poor lamination from the inside. Instead of layers, the dough is clumped together. The almond croissants are also made with a strange ground almond mixture that did not taste like frangipane. The nut roll was the best of the bunch but overbaked so the nuts tasted burnt. Maybe my standards are too high but if you're going to charge $6 for a pastry, it should be decent. I gave them an extra star because the gentleman at the register was very nice, and this place has a lot of potential. Once the pastry chef irons out these kinks, I'd love to come back and try them again.

September 10 · R MBest spot to get healthy and delicious food!!! So many gluten free options, kombucha, amazing teas, hearty soups, sandwiches and great vibes. You can walk down to the river and have a nice view while you sip your drink too. Lovely place.
