III Mas Bakery & Deli Introduce
For Californians constantly on the lookout for the next great culinary experience, III Mas Bakery & Deli in Glendale, CA, is more than just a bakery—it's a celebrated ghost kitchen that has quickly become home to one of Los Angeles’ most talked-about sandwiches. This is a business built on passion, technique, and deep Armenian heritage, creating a unique food experience that perfectly blends old-world flavors with American culinary traditions. Operating out of a take-out-only model, III Mas Bakery & Deli focuses entirely on quality, producing a small but powerful menu that has garnered rave reviews from critics and local food enthusiasts alike.
The name “III Mas” (pronounced Yerord Mas) is a nod to the 3rd district in Yerevan, Armenia, where the owner’s family originated, connecting every dish back to its cultural roots. Led by Chef Arthur Grigoryan, who brings classical training and experience from a renowned LA restaurant, the kitchen expertly fuses influences from Armenian, Middle Eastern, and American deli traditions. If you’re a fan of complex, bold flavors and baked goods made with unparalleled freshness, this Glendale spot promises a meal that lives up to the online hype.

Despite its small menu of typically five items, III Mas Bakery & Deli delivers massive flavor. The offerings reflect the owners' commitment to Armenian heritage and culinary excellence, blending traditional recipes with modern, high-quality preparation techniques.
- The Legendary Basturma Brisket Sandwich: This is the undisputed star, described by local patrons as one of the best sandwiches in LA. It’s a hybrid modeled after classic pastrami but infused with the bold, aromatic seasoning of Armenian basturma (a dry-cured meat). The brisket is smoked low and slow (up to 16 hours) over live burning oak, then combined with melted Swiss cheese, house-made pickled Persian cucumbers, and their signature Chaman Spread—a spicy garlic spread with a Russian dressing base featuring the basturma spice mix (fenugreek, paprika, cumin, and cayenne).
- Fresh, Unbelievably Light Bread: Customers consistently praise the in-house pita bread or aish baladi (Egyptian flatbread), which is described as fluffy, light, and perfectly fresh. The bread is a critical component that elevates the entire sandwich experience far beyond the standard deli fare.
- Authentic Armenian Baked Goods: As a bakery, the foundational items are excellent. These include large-format items like the forearm-length Cheese Byoreks (Armenian cheese pastries) and the flavorful flatbread, Msalosh (Armenian lahmajoun). Msalosh features a sturdy, pizza-like crust covered edge-to-edge with seasoned coarse ground beef.
- Morta-De-Lav-Eli Sandwich: Another popular sandwich, which features a playful fusion of Italian and Middle Eastern flavors with mortadella, labneh (strained yogurt), crushed pistachios, and a zesty oregano vinaigrette, served on their house-baked aish baladi.
- Commitment to Heritage: Every dish, from the bread based on the owner's Armenian grandmother's recipe to the lahmajoun, which honors family origins in the region of Aintab (Gaziantep), is made with a deep respect for history and culture.

III Mas Bakery & Deli is worth choosing for several key reasons that resonate strongly with the sophisticated Californian palate, particularly those seeking high-quality, flavorful, and culturally rich food.
First and foremost is the culinary excellence. This is a business run by a classically trained chef, Arthur Grigoryan, who is passionate about creating a high-end food product that tells a story. The meticulous 16-hour smoking process for the brisket and the use of the house-made, incredibly fresh bread (often called "unreal" by reviewers) demonstrate a dedication to craft that far surpasses the typical takeout spot. Customers consistently state that the Basturma Brisket Sandwich is a favorite in the entire Los Angeles area, even claiming it surpasses established deli icons in flavor and texture. This is a must-try item for any sandwich aficionado.
Secondly, choosing III Mas is choosing a unique cultural blend. The food represents a delicious dialogue between Armenian heritage and Southern California’s diverse food scene, introducing flavors like fenugreek and chaman spread in a way that is immediately accessible and deeply satisfying. This focus on a limited, exceptional menu allows them to maintain incredible quality control, making every item a guaranteed hit.
While the prices reflect the quality, the sandwich is noted by many to be substantial enough to be split between two people or saved for two meals, providing considerable value. Whether you are craving the epic, bold flavors of the Basturma Brisket, the fresh simplicity of their Morta-De-Lav-Eli sandwich, or a traditional, meaty Msalosh, III Mas Bakery & Deli offers a truly memorable experience. Plan your visit during their operating hours (Thursday through Sunday), order online, and prepare to be impressed by one of Glendale’s most exciting culinary secrets.

★ 5★ 4★ 3★ 2★ 1Just Wow! The basturmi sandwich is a must!! The traditional bread they use makes all the difference. Unlike a regular pastrami sandwich with sliced bread this is far from being dry, the meat was perfectly cooked and soft and the pickles cheese and sauce made this sandwich one of my favorites in LA!! I wish they would open more days than Just Sunday.
July 21 · Céliaa huge fan of pastrami sandwiches, I’ve had my eye on this basturma creation from III Mas Bakery in Glendale for a while. I’ll admit—I was a bit skeptical it could live up to the Instagram hype. But I’m glad to say I was completely wrong. This sandwich surpasses Katz in more ways than one. The meat is incredibly flavorful, packed with bold, aromatic seasoning that stands out with every bite. And the bread? On a whole different level—fluffy, light, and unbelievably fresh. It ties everything together perfectly. Highly recommend. I’ll definitely be coming back for more.Follow on IG - the_hungry_emil
May 03 · Emil BabadjovOrder ahead and get your brisket then eat it right there in the car. There is no where to eat on site. Pickup is at a commercial kitchen. Two of us ordered 1 $30 sandwich and had it cut in half. Could’ve smashed the whole thing
September 08 · Sheida NThis sandwich was one of the best I’ve ever had AND the service was even better! Even though I had an order pick up time it turns out my card was never charged and I never got an email confirmation. I told the lady that’s okay and it must have been my fault and she said they sold out but she had an extra one in the kitchen and gave it to me for free for waiting so long. Went above and beyond and I’m very grateful for her service. Thanks and will be back soon!
July 06 · James KurtzBrisket Basturma sandwich. Bread was good and sauce was decent. Wait time not worth it. Pickup not worth it. This "ghost kitchen" fad needs to disappear. Brisket shouldn't be Basturma, Basturma shouldn't be brisket. We ordered for 45 mins later pickup time (the system gave the time) only to arrive and have to wait an additional 15 mins. Price definitely isn't justified. If you miss this skip this spot, you won't be losing much.
