For Wisconsin residents seeking what many believe is the **absolute best bagel in Milwaukee**—and possibly the entire Midwest—look no further than **Ruby’s Bagels at Zócalo Food Park**. This small business, founded by Daniela "Ruby" Varela, has captivated the community with its dedication to the craft of a truly great bagel. The journey began with Varela's determination to fill a void in Milwaukee’s bagel scene, resulting in a unique recipe and a multi-day process known as **“spoiled and boiled”** that ensures a perfect, chewy, and soft interior with a solid crust.
More than just a purveyor of exceptional bagels, Ruby's is a business built on local values. It proudly **identifies as women-owned and Latino-owned**, with the team often affectionately referred to as the "Bagel Babes," underscoring its family-run roots and dedication to community. Operating out of the vibrant Zócalo Food Park, Ruby's Bagels has become a cherished neighborhood spot, beloved for its authentic product, simple-but-perfect menu, and commitment to the "old-school way" of bagel-making. Whether you're planning a massive brunch or just need a simple, delicious breakfast on the go, Ruby's is often touted as being absolutely "worth it."

★ 5★ 4★ 3★ 2★ 1So happy that Ruby's opened up in our neighborhood, as we're there most weekends for a bagel sandwich. It's absolutely my favorite bagel in Milwaukee (maybe in the Midwest?!). Love to see the Bagel Babes finding their stride over here on this side of town. We're also so glad they've opened up online orders again during the week which makes it a breeze to pickup our order! However I'll always gladly wait for a Ruby's bagel and day of the week, it's definitely worth it! 🥹
July 27 · Carrie WI completely forgot to review Ruby's and I feel like an a-hole! We got 3 dozen bagels ordered in advance for our yearly bagel brunch Thanksgiving morning. It was our first year ordering Ruby's and we plan on Ruby's from now on. Easy to order and amazingly easy to pick up...plus the selection was perfect. Ruby's is awesome!
March 14 · Shannon DevineThese bagels were the best I've ever had. My wife and I both got the BEC on Rosemary and Sea Salt. Every bit worth the price you pay. Will definitely be returning.
August 07 · Evan CoverdillThe bagel was not worth the 20 minute wait. If you are going to make a bagel to taste like that then the wait time needs to be less than five minutes. Other than that the customer service and the atmosphere was nice! Taste like something I could have made at home.
June 14 · Wayne JonesThe cream cheese was very good quality along with the salmon in the lox bagel. I don’t know if it was because we went later in the day, but the bagels were very, very chewy and hard to bite into. Also pretty pricey for what you pay for.
