## Introduction / Overview: Redefining Allergen-Friendly Baking in Washington
**Shambala Ancient Grain Bakery Inc.** represents a true evolution in the Washington bakery scene. This is not just a place for baked goods; it is a dedicated, **women-owned** business on a mission to create exceptional bread and pastries that are delicious for everyone, regardless of dietary needs. Shambala specializes in baking with **ancient grains** (like millet, teff, and quinoa), producing an expansive menu that is entirely **Gluten-Free, Soy-Free, and Peanut-Free**. This dedication makes them a crucial resource for the Seattle and wider Washington community seeking safe, high-quality, and non-GMO options.
Located in the vibrant Fremont neighborhood of Seattle, Shambala operates as a **Wholesale bakery** and a **pre-order/pickup hub**. While their famous Mount Vernon storefront has transitioned, their Seattle kitchen ensures that their artisan loaves, fluffy biscuits, and decadent sweets are still widely available across the region through various retail partners, markets (like the Ballard Farmers Market), and direct online ordering/pickup.
The core promise of Shambala is taste without compromise. Customers consistently rave that the food is simply **good**, with one review noting, "I don't need to care about whether their menu is gluten-free, I DO care whether their food tastes good - and it does!!" Products like their French Toast and their vegetarian biscuits and gravy are celebrated for their superb flavor and perfectly balanced sweetness, challenging the misconception that allergen-friendly baking must sacrifice taste or texture. Shambala is truly a visionary in the realm of healthful, delicious ancient grain baking.

★ 5★ 4★ 3★ 2★ 1Yum! I don't need to care about whether their menu is gluten-free, I DO care whether their food tastes good - and it does!! We ordered the french toast and the (vegetarian) biscuits and gravy. The french toast was superb, with a light crust of visible egg on the bread, and a perfectly sweet (but not overly sweet) topping of blackberry sauce and honey. As for the biscuits and gravy, the biscuits weren't as fluffy as I would ideally prefer but I'll give them a pass since they tasted fine *and* because the gravy was vegetarian and very flavorful. We also bought two cookies to-go that are quite good - I really like their thin cookies. We live half an hour away but the eye surgery center I occasionally visit is in Mt Vernon so I plan to be a regular on the days when I'm in town.
September 21 · Emily GoodinThis is NOT an actual place. You can find food from Shambhala at Lazy Cow Bakery, or you can place an order online. They used to have a location in Mt Vernon that was INCREDIBLE. They had to close it :(I have tried their bakery items at Lazy Cow, and unfortunately agree that they are usually dry and dense. It seems like they might be sitting out for a while.Definitely hope something gets figured out because this used to be a favorite!
August 10 · DanaVERY expensive. $25 for a loaf of bread and a scone. There was no labeling on products. No telling you what it was or how much it was. How convenient. Bread was so so and scone was ok. I’ll never go back.
September 26 · Chris ConleyThis is the first time I've eaten here and I loved it. I haven't had biscuits and gravy in 3 years since I found out I had Celiac's; it was so delicious. And the French toast was yummy with the berry compote. Thank you for making such great gluten free food!!
May 06 · Faith SchmalThis is a Mount Vernon must! Gluten free, Vegan, non-GMO and delicious! Do yourself a favor and try the fresh baked breads, cookies, scones... the list goes on. 10% 60+ yrs discount.
