Temple Pastries Introduce
Introduction / Overview
For residents of the Washington region who believe baking is an art form, **Temple Pastries** in Seattle's Central District is a required pilgrimage. It’s an acclaimed, queer-owned small business that has quickly gained a reputation far beyond a typical bakery, becoming a hub for pastry innovation and expertly crafted coffee. Temple Pastries is not just about sweet treats; it’s a commitment to precision, technique, and adventurous flavors, all executed with absolute finesse.
Founded by self-taught baker and Head Chef Christina Wood, the bakery specializes in **sourdough croissants** and other laminated dough creations like the famous **Cruffin** (a croissant-muffin hybrid). What truly sets this establishment apart is the fusion of global culinary influences and the incorporation of less common grains like rye and buckwheat, resulting in a menu that is constantly surprising and delightful. From an extraordinary **Cardamom Almond Brioche** to inventive, savory options like the Banh Mi Sausage Croissant, every item is made from scratch and by hand.
The space itself is surprisingly large and inviting, embodying a cool, minimalist aesthetic with plenty of natural light and beautiful, planty decor. It operates as both a stellar bakery and a full-service coffee shop, thanks to a partnership with the excellent **Broadcast Coffee Roasters**, ensuring that your pastry is perfectly paired with a high-quality espresso drink. Whether you're planning a quick visit for breakfast or looking for a comfortable place to hang out, Temple Pastries offers an elevated experience that Washingtonians consistently rave about.

What is Worth Choosing
For a first-time visitor to Temple Pastries in Seattle, the ideal order should showcase their mastery of laminated dough and their flair for unique flavor combinations.
First and foremost, you must try the **Cinnamon Cream Cheese Cruffin** ($5.00). It is considered a house specialty and an absolute must-have. Patrons describe it as an unforgettable combination of a crunchy, flaky exterior (from the croissant dough) and a smooth, sweet interior (from the cream cheese filling).
Next, choose a **Seasonal Weekend Special** if your visit falls on a Saturday or Sunday. These are the items where the chef's innovation shines brightest, with past creations like the savory Miso Caramel and White Sesame Cruffin or the complex Horchata Brioche Donut showing the creative fusion that is the hallmark of the bakery. These specials demonstrate the commitment to using unexpected, high-impact flavors.
Finally, pair your pastries with a perfectly prepared coffee. Since they partner with Broadcast Coffee Roasters, you can expect a high-quality espresso. Ask about their **rotating seasonal lattes**—the bakery is known for experimenting with unique drink flavors (such as their past matcha and lemonade blend) that mirror the creativity of their baked goods. If you prefer a classic, a beautifully presented **Cortado** is always a reliable choice to complement the richness of the pastries.
The combination of an iconic Cruffin, an adventurous weekend special, and a delicious espresso makes for an authentic and truly rewarding Temple Pastries experience.

★ 5★ 4★ 3★ 2★ 1The cinnamon cream cheese griffin is my absolute favorite. It’s crunchy, creamy, and messy, and so so good. Great with the pretty cortado that I had. Every pastry I have ever had here is amazing. Just looking at their case, I could eat (at least) one of each. They always have something new, seasonal, and different. The vibe here is so cool- very planty and minimalistic, but not sparse. Anyway, come here to hang out or wait in the line because trust me, it’s worth it!
August 09 · Peggy CraneIncredible bakery where everything—from flavors to techniques—is executed with absolute precision. The space is surprisingly large, with plenty of seating downstairs, even more upstairs, and a few outdoor tables as well. As expected, they're known for their pastries and baked goods, but they also offer an extensive menu of coffee, drinks, and a few sandwiches.I started with the breakfast sandwich and a seasonal drink whose name escapes me—it was a mix of matcha and lemonade. The sandwich was very tasty, with the highlight being the fresh-baked milk bread. The drink was interesting, but the grassy-sour combination wasn’t really for me.Naturally, I also tried a variety of baked goods. My favorites:• Parisian hazelnut flan – Like the best custard tart you’ve ever had. Absolutely phenomenal if you get it warm, first thing in the morning.• Banh mi sausage croissant – Really unique and delicious. You might be skeptical of the pickled carrots and daikon, but they blend perfectly with the buttery croissant.• Rye ham & cheddar – A rye croissant isn’t something you see often, but it’s great—more nutty and savory than a standard one.• Kouign amann – I mean, of course. The croissant layers are light and fluffy, and the caramelized syrup is rich and delicious.• Cardamom almond brioche – Simple, with perfect texture and balance of flavors.• Chocolate & cocoa nib cookie – I never thought to put cocoa nibs in a cookie, but it's a perfect way to add extra bitterness without overpowering other flavors.• Strawberry macaron – Probably the best macaron I’ve ever had. The texture is unbelievably light, and it’s bursting with flavor—unlike most macarons around here, which just taste like a bland Oreo. All the macarons are excellent, but the strawberry is my favorite.
July 28 · Kyle CooleyThe best croissant pastries I've ever had!I've tried many croissant-based pastries, and this is by far the best one I've had across the country. Sadly, I was only visiting, but I went back twice within five days of my visit, which should tell you something.Food:The best things to get here are: gruyere cheese croissant (a must), the mushroom quiche, and the flan. Honestly any croissant-based pastries. Patisserie isn't their strong suit but their raspberry charlotte was quite amazing. Their black sesame desserts are a hit or miss, sometimes they would have a weird herbal-y taste to it.Coffee is a no. We got an espresso latte and a match latte, both were very bland so not worth your $7.Vibe:Very cute with plenty of sitting areas for a bakery. Bathrooms are locked with codes fyi. The line starts to pick up at around 9:30am on the weekend. Do go early since they sell out most of their best pastries in the morning. We went once at 2pm and they only have a third of the pastries case left.
July 28 · Ky LeLovely little neighborhood pastry shop. Very cute inside. They have some interesting pastries and cakes. I got the miso shishito brioche donut and it was really balanced - savory, pillowy, and correct filling to dough ratio. Latte was also very good but temperature could have been a little warmer.
August 31 · Lin YuanGoodbye Macrina, Goodbye Farine, Hello Temple Pastries ❤️I love food, I love bakeries. I've never felt like I couldn't reproduce at least a part of a menu, but this place is in its own league. We had a mushroom quiche, and the made to order sausage breakfast sandwich. Absolutely stellar. The quiche, the mushrooms, and the egginess once heated to serve was so good and it wasn't what I ordered but I forced sharing 😂.I actually went back and ordered the cheesy, egg and sausage sandwich. It was so good, my walk back to work all I kept talking about was how it was so good. The sausage breakfast sandwich was executed so well. The egg was perfectly cooked, the sausage was out of this world, and the cheesiness was American cheese that made you feel like a kid again. The bread was crispy, soft and buttery all at the same time. I didn't know that could be possible. And last. The flan cruffin? It was like a Portuguese egg tart made for Americans but with the elegance of the cruffin and some crispy caramelized bottom layer. There was no holding back on the vanilla beans in the custard. As any Viet person would say when something is perfectly executed, "it's not too sweet."Definitely excited about coming back again. And the team, sooooon sweet. I'm glad we are walking distance. There isn't enough miles to walk off all the goodness. 😂
