For Connecticut residents who appreciate the rich flavor and satisfying texture of authentic, handcrafted bread, Wave Hill Breads Wholesale Bakery in Norwalk is a name that needs no introduction. This isn't your average bakery; it's a place where the time-honored traditions of European baking are meticulously preserved and celebrated. Wave Hill Breads has built its reputation on a deep respect for the craft, focusing on long fermentation times, fresh-milled grains, and the skill of hand-shaping every single loaf. This dedication to process results in bread that is not only incredibly delicious but also more digestible and nourishing. The bakery has become a cornerstone of the local food scene, supplying restaurants, grocery stores, and farmers markets with its exceptional products, and also welcoming the public to its retail location to experience the freshness firsthand.
The story of Wave Hill Breads is one of passion and a commitment to quality. The owner, Tim Topi, a Master Baker who apprenticed in Rome, brought his deep respect for traditional methods to Connecticut. He and his team honor techniques that have been largely abandoned by modern commercial bakeries, such as milling grains on-site just before they are used. This practice, combined with a dough fermentation process that can last up to 72 hours, is what gives their bread its unique flavor and light, airy texture. Customers often remark on the integrity and skill they can taste in every bite, highlighting a quality that is truly unmatched. This meticulous attention to detail has earned the bakery a loyal following, not only in Norwalk but throughout the state and even in New York, where they are a favorite at local farmers markets.
While the name includes "wholesale," the bakery has a retail storefront that allows the public to experience its full range of products. This has created a community hub where locals can not only purchase bread and pastries but also enjoy coffee, breakfast, and lunch. The bakery prides itself on being a place where the community can gather and connect over a shared love of real, honest food. The mission is simple: to bake breads for the community that are the foundation for healthy eating. The passion and precision of the team, combined with a deep respect for tradition, are the hallmarks of Wave Hill Breads and the reason it has become such a beloved institution for anyone in Connecticut who values true artisan baking.

★ 5★ 4★ 3★ 2★ 1Amazing sourdough bread that tasted like real sourdough and the only bread that doesn’t upset my stomach after eating too much of it. They are delicious toasted and dipped in olive oil with salt. I am glad they came to the union square farmers market in nyc.

June 30 · Olivier ReginensiThe best breads ever! Great family business. Freshly baked by hand. Large variety of rustic style and sandwich loaves. Love the monkey breads and the crossiants too.
March 25 · Lexi GNot everyone is welcome at Wave Hill BreadsI was out on a rainy morning at the local farmers market in Old Lyme CT.I try to do business with the local farms and small businesses any time I canI stopped by Wave Hill Breads. The young man working the stand told me he doesn’t want to sell me bread because of the hat I was wearing. That’s what makes America great the freedoms we have.Any CT business or customers that are spending their hard earned dollars at Wave Hill Breads should be aware. If you’re conservative, and have a different point of view they don’t value or want your business. I actually don’t really eat much bread. I was buying it for friends to spend money locally to support the vendors at the famers market.
May 31 · James CowanWas gifted a box of mixed macaroons. I had the pistachio and it was the perfect texture of slightly crunchy crust, tacky texture inner paired with fluffy filling rolled in crushed pistachio. Not overly sweet with just enough flavor. Fantastic!
