ANOTHER slam dunk, knock on wood but the bread in this city has yet to let me down. I made a last minute subway trek out to this spot, it was cold and dark and took awhile but it's important to have healthy doses of indie movie dramatic alone time and what are subways for if not that? Anyway after dramatically looking out the car window and refusing to sit down I got off the train and followed the heaven scent of yeasty greatness to this little haven. I was greeted by a beautiful raven haired employee who very kindly walked me through their selection, their hours are pretty limited and I think I was too late to have choice of their full menu. I went home with a loaf of sourdough milk bread, something I've never had! Very exciting. The scent of pure heaven wafted around me the whole way home. It was difficult to uphold the dramatic subway vibe and not tear into it like a bear. But honestly that would have been a better movie.ANYWAY. Point is. This bread is damn good. So versatile. It's soft and plush and sweet with enough tang to swap from sweet to savory, that CRUST?? Godlike. You could use this for anything. I've been using it for ricotta toast, it's great for a fish sandwich, also think it would make fabulous French toast but I've yet to try it since eggs are climbing to gold rush Era prices. This bread is the product of pure talent. I'm very excited to go back at an earlier time and see their full spread, but I don't think you could buy a bad thing here. Worth the trip. Highly recommend. - Siena WD

ACQ BREAD CO. Introduce

In a city as sprawling and diverse as New York, true culinary gems are often found not in grand storefronts, but in small, unassuming spaces where passion for a single craft reigns supreme. ACQ Bread Co. is a perfect example of this. Tucked away on Clinton Street in the charming Carroll Gardens neighborhood, this micro-bakery has become a celebrated destination for those who appreciate the art of artisanal bread. It's a place that thrives on quality over quantity, with a business model built around limited hours and high demand, creating a sense of anticipation and exclusivity that makes every purchase feel like a special treat.

The story of ACQ Bread Co. is one that resonates deeply with the local food scene: it’s a story of a small, independent baker pouring their heart and soul into their craft. The bakery specializes in sourdough, a practice that requires patience, skill, and a deep understanding of fermentation. This dedication results in bread that is far from ordinary. Customers consistently rave about the product, describing it with glowing terms like "damn good," "godlike," and "the product of pure talent." The signature item that seems to captivate everyone is the sourdough milk bread, a unique and delicious fusion of a classic sourdough tang and the plush, soft texture of Japanese milk bread. This kind of innovative yet traditional approach is what sets ACQ Bread Co. apart from its peers.

The experience of visiting ACQ Bread Co. is as much a part of its charm as the bread itself. As one customer beautifully described, it can involve a "last minute subway trek" and a "dramatic alone time," a journey that culminates in the "heaven scent of yeasty greatness." The physical space of the bakery is small and "quaint," a "no-frills, cozy spot that focuses on the essentials." This ambiance, combined with the personal and friendly service from staff who are passionate about their products, creates a truly authentic and memorable experience. Given the bakery's limited hours—open only a few hours on Fridays and Saturdays at their physical location and at two Greenmarkets on the weekends—planning a visit becomes a small event in itself.

The bakery’s business model of having limited hours and a presence at Greenmarkets across the city is a testament to its focus on freshness and a strong community connection. This approach allows them to connect directly with their customers and build a loyal following of bread enthusiasts who are willing to go out of their way to get their hands on a loaf. It's a place for true aficionados, for people who understand the difference between a mass-produced loaf and one that has been carefully crafted with quality ingredients and pure talent. The passion that goes into every loaf is palpable, and for many locals, that is what makes the bread from ACQ Bread Co. worth every trip and every wait.

ACQ BREAD CO. Menu

  • Menu

  • ACQ Sourdough Boule US$11.00

This bread was designed to highlight the complexity of deeply fermented Einkorn wheat. Its crust shatters while still being robust and the crumb sometimes reminds me of marshmallows

  • ACQ Sourdough Sandwhich Loaf US$11.00

This bread was designed to highlight the powerful complexity of deeply fermented red fife flour. Its crust shatters while still being robust and the crumb sometimes reminds me of marshmallows

  • Seaweed Butter US$11.00

This seaweed butter comes from grass-pastured cows upstate at Kriemhild dairy farm. I muddle in five different preparations of seaweed which have been either powdered or flaked to create rich umami, nuanced by a floral fermented seaweed called Dulse. I scorch braised kombu for smoke and depth. All of the seaweeds are foraged by hand

  • ACQ Milk Bread US$12.00

Flour and rice are cooked into a porridge called Tangzhong, much like mochi, which is folded into fresh organic milk. I incorporate butter from Vermont and natural salt and minerals of the Guérande salt marshes. Enriched dough and egg yolks yield a glowing amber crust

  • Stout & Seeds Rye Bread (1/2 loaves) US$9.00

This loaf is crackly, thick, and maltey. I mill all of the flour fresh from farmer-owned and operated Danko Rye and Einkorn wheats. I mill daily to yield the boldest flavor possible, sort of like grinding coffee fresh. I ferment the porridgey dough with stout beer and agave syrup. I bake aggressively to give a crunchy, medium-thick crust with a velvet crumb like a malted milkshake. Lastly, I wild leaven with two separate starters for acidity and tenderness
