Welcome to the world of Dominique Ansel Workshop, a true gem for pastry lovers nestled in the heart of New York City. This isn't just any bakery; it’s a place where culinary artistry meets everyday indulgence. As New Yorkers, we are spoiled for choice when it comes to exceptional food, but Dominique Ansel's establishment stands out for its commitment to quality, creativity, and the sheer delight found in every bite. From the moment you step inside, the aroma of freshly baked goods and rich coffee promises an experience that is both comforting and exciting. It’s a destination for those seeking a sweet escape or a savory treat, whether they’re starting their day or taking a mid-afternoon break. The focus here is on celebrating classic French baking techniques while infusing them with a modern, innovative spirit that is uniquely New York.
The genius behind the name, Chef Dominique Ansel, is a James Beard Award-winning pastry chef who has earned international acclaim for his groundbreaking creations. While his main Soho bakery is famous for its inventions like the Cronut®, the Workshop in the Flatiron district offers a distinct experience. It serves as a hub of creativity, a small shop located within the company’s main production kitchens. This unique setup means that patrons can enjoy incredibly fresh pastries, often straight from the oven. The atmosphere is bustling and professional, yet always friendly. Customers frequently praise the kind and efficient staff who are happy to guide you through the tempting array of options. The bakery’s reputation is built on a foundation of quality ingredients and a passion for perfection, making it a beloved spot for those who appreciate the finer things in life.
The menu at Dominique Ansel Workshop is a testament to the bakery’s dedication to excellence. While it might be known for its sweet items, the savory selections are equally impressive. Take, for example, the Bacon, Egg, & Caramelized Onion Croissant, which has been described by customers as a savory pastry so good you could eat two of them. The runny, jam-like yolk combined with rich bacon and caramelized onion on a flaky croissant is a breakfast dream come true. For those with a sweet tooth, the offerings are a tour de force of flavor and texture. A customer raved about the Passionfruit and honey vanilla brioche, noting its sweet, rich, and creamy profile with a delightful tart bite from the passionfruit custard. Another favorite is the Earl Grey and Caramelized Pecan & Mascarpone Pie, praised for its crispy, flaky crust and creamy, delicious Earl Grey filling. The variety ensures that there is something to satisfy every craving, from the familiar comfort of a classic croissant to the decadent adventure of a new creation.
Beyond the pastries, the beverages are also crafted with the same attention to detail. The hot chocolate, in particular, is a standout. Described as rich but not overwhelmingly so, it’s a perfect companion to any of the baked goods. The inclusion of a great marshmallow adds to the experience, elevating a simple drink to a memorable treat. This meticulousness extends to every item, from the coffee to the unique seasonal creations. The Workshop also offers a selection of retail items, including cookbooks and other merchandise, allowing customers to take a piece of the Dominique Ansel experience home with them. It’s a place that encourages lingering and enjoying the moment, even if it’s on your feet, as the space is designed for a quick and pleasant visit rather than a long sit-down.
Dominique Ansel Workshop is more than just a bakery; it's a creative hub. Its location within the commercial kitchens means that you are getting the freshest possible baked goods. It’s a place where the magic of pastry-making happens right before your eyes. The presence of the master chef himself on occasion adds to the allure, with one customer even recalling a charming encounter where he signed books for their family. This personal touch and passion are what truly set the workshop apart. It’s a place where every pastry tells a story of craftsmanship and dedication. The commitment to using high-quality ingredients, from Beurre d'Isigny butter to Les Grands Moulins de Paris flour, is evident in every flaky layer and perfect crumb. This dedication to quality is what makes the experience consistently excellent and keeps locals and visitors coming back for more.
Dominique Ansel Workshop's prime location makes it easily accessible for anyone in the city.

★ 5★ 4★ 3★ 2★ 1Dominique Ansel’s Workshop is a great bakery to get fresh and delicious treats. My hotel was just around the corner and I was tickled to find that the bakery was just sound the corner. The baked goods were delightful. Everything was fresh and crispy, and I enjoyed how the sweet items were not too sweet while the savory items were rich and delicious.I got to try the Coffee Cake and Chocolate Croissant Nest, the Passionfruit and honey vanilla brioche, the Earl Grey and Caramelized Pecan & Mascarpone Pie, as well as the Bacon, Egg, & Caramelized Onion Croissant and everything was delicious. The Coffee Cake and Chocolate Croissant Nest was the most decadent, and the rich chocolate would likely delight any chocolate lover. The Passionfruit and honey vanilla brioche was my favorite - it was sweet, rich, and creamy, and I loved the sweet and tart bite from the passionfruit custard. The brioche was super soft as well. The Earl Grey and Caramelized Pecan & Mascarpone Pie was a close second for favorites. It was crispy, flaky, and the Earl Grey filling was creamy and so delicious. As for the Bacon, Egg, & Caramelized Onion Croissant, it was a savory pastry that I could easily eat two of. The yolk of the egg was still a bit runny and jam like, and who could go wrong with bacon on a croissant? There are tables to stand and eat your goodies at, but no chairs so it’s not a place to sit for hours and linger, but it was clean, the staff was friendly, and we found that we could linger there as long as we liked standing. One added bonus for us - Chef Ansel was in the house when we visited, and he is absolutely charming. He was even kind enough to sign two books for my family members who fan-girled when I called them to let them know he was there. (He has books and merch there, too!). Overall, it’s a delightful bakery that I would stop by again when visiting NY.
February 28 · Kat ChanDefinitely worth the hype. I tried a few of their bakery items like the croissant and everything was so good. The showstopper was the hot chocolate. It was rich but not too rich and the marshmallow was great. Definitely give them a try!
February 10 · Juan ChavezKind of a letdown. This place was next door to our hotel on a rainy day, so we popped in for a quick morning bite. Everything looked amazing, but the final product was sub par. The quiche was okay and the le breakfast sandwich was very disappointing. The croissant was almost perfect, but the eggs inside were ice cold even after they rewarmed it for us. The staff was nice enough to refund the error, so at least they took care of that. Maybe we just ordered wrong, but I’d skip this place when so many other options are available.
May 09 · Cris TownsendI like the workshop a good deal more than the OG location. The pastries here are well-executed with the right amount of sweetness. The Spring Street location overloads on the sugar; every time I lined up for a Cronut it felt like a bad decision as I could’ve just eaten a spoonful of sugar straight from the bag.
April 06 · Richard WWe absolutely love visiting Dominique Ansel Workshop—it’s become a special treat for our family! The pastries are truly next-level (as you’d expect from Dominique Ansel). Every bite is delicate, layered with flavor, and clearly crafted with precision and care. Whether it’s the flaky croissants, inventive tarts, or seasonal specials, everything is consistently exceptional. What truly makes our visits memorable, though, is the warm and thoughtful service—especially from HanaSara. She has helped us on our last two visits and goes above and beyond to make the experience feel personal and welcoming. She’s incredibly kind to my young daughter, taking the time to explain the pastries in a way that makes her feel included and excited. That kind of attention and genuine hospitality is rare and so appreciated. We’ll definitely keep coming back—not just for the world-class pastries, but for the warmth and kindness that makes the Workshop feel like more than just a bakery.
