- Artisanal Pastries: A rotating selection of sweet and savory treats, baked fresh daily. This includes items like chocolate and almond croissants, fruit danishes, babkas, ginger tiles, and various muffins and cakes. They use high-quality ingredients like Kriemhild Dairy Farms grass-fed butter and locally sourced organic milk and free-range eggs.
- Cookies: A customer favorite, with reported delicious options like chocolate chip, chewy ginger chocolate, buckwheat cardamom, and peanut butter cookies.

What truly sets HeartStone Artisan Bakery apart and makes it a must-visit for New Yorkers in the region are its distinctive features and highlights:
- Naturally Fermented & Organic: Their signature approach to bread making, utilizing natural yeast starters (levain) and a slow, cool fermentation process. This method, combined with their use of organic, whole grain, and stone-milled local flours from New York suppliers like Farmer Ground Flour, Champlain Valley Milling, and Gianforte Farms, ensures exceptional flavor and potential health benefits, as the process aids in breaking down absorption prohibitors and predigesting gluten. Many customers who struggle with regular yeast breads find they can enjoy HeartStone's sourdough.
- Local & Farm-to-Bakery: A strong commitment to sourcing ingredients locally, including growing many of their own vegetables and herbs at Alambria Springs Farm. This farm-to-bakery model ensures freshness and supports the regional agricultural economy, contributing to the "Northeastern Bread Basket" revitalization.
- Handcrafted & Small-Batch: Every loaf and pastry is mixed by hand or in a gentle fork mixer, shaped, scored, and loaded by hand. This attention to detail in small batches ensures consistent quality and a truly artisanal product.
- Traditional Ovens: They bake their goods in both a traditional wood-fired oven and a beautiful Italian steam tube deck oven, which contribute to the unique crust and texture of their breads.
- Community Roots: The bakery originated from a passion for sustainable farming and bread-making on Alambria Springs Farm, built with local craftsmen and using sustainably harvested and locally sourced materials. This deep connection to the land and community is evident in their philosophy and products.
- High Customer Satisfaction: Consistently receives high praise from customers, with reviews frequently highlighting the deliciousness of their cookies and breads, the beauty of their craftsmanship, and the friendly, attentive service. Many locals consider it a "must-visit" when in Cazenovia.

★ 5★ 4★ 3★ 2★ 1Heart Stone artisan bakery is amazing. Absolutely amazing service. And the breads beautifully crafted, as well as the sweet treats had a buckwheat cardamom cookie ….. delicious! Peanut butter cookie was so yummy . Taking my beautiful sourdough, toasting and have some local honey on it! Such a sweet spot with sweet people! When in Caz it’s a must!!!
March 16 · kristen pikarskyDELICIOUS COOKIES!! We had Chocolate Chip and Chewy Ginger Chocolate. They were delicious and I regret not going back and buying more of the Ginger Chocolate. They were DELICIOUS!! It’s apparently a local favorite for bread… several people recommended it to us but we wanted something sweet. Service was friendly and attentive. We loved this little store and highly recommend stopping in for a treat when you’re in town!
October 13 · Michelle BradyWe purchased a couple cookies, pecan bar, and two pieces of the broccoli/cheddar quiche. We were told our total ($23 and change) and the person at the register spun it around for us to tap our card, which we did, but then realized a $4.60 tip had been added automatically on top, so over $27 total. Since we were told the $23 total, that was what was expected and then we noticed the different total and tip added, which we brought up and asked how to go back since that amount was added. We were told by the person at the register “I can’t go back…thank you!” It felt very dishonest as we were charged a different total than what we were told and there was absolutely no attempt to remedy the situation. We were not going to argue over $4, but we certainly won’t be back. Also, the broccoli and cheddar quiche was pretty much just egg. It was shocking how few pieces of broccoli there were and there was no discernible cheese flavor. The ginger chocolate cookie was honestly delicious and even had small pieces of ginger. Still not worth the icky taste left by how the store handles their cashing out/lack of any customer care. If they are going to have the machine automatically add a tip, especially 20%, they should advise the actual total you will be charged and/or that a tip is being added so you don’t automatically tap your card. They definitely could have canceled and re-rung out the order, or even offered another cookie or something..anything besides saying an incorrect total and charging higher. Prices were also not posted next to most items, so you’d have to ask if you’d like to know how much things cost.
July 07 · Holly WalkerWe had a delicious brunch choosing an array of cold salads and baked goods. The quinoa salad was fresh and tasty - probably the best I've had, the cold sesame noodles were perfect, not too sticky and pasty like some you get, and the garlic scape pesto was zesty and potent, and the hummus was equally full of flavor. Perfect with the fresh baked pumpernickel-rye. Lastly, the babka muffin... I've had my share of babka having lived in NYC for 35 years - this one may be the best, easily among the top 5. Moist and chocolatey and heavenly. The service was helpful and kind.
July 27 · Alexandra BrownWe decided to drop in to the bakery while we were in the area and that was a very good decision by us. It's an adorable bakery that packs a freshness punch. The woman who waited on us was delightful. Everything we tried and ended up buying felt like it was fresh out of the oven. Some garlic bread, cookies and other treats, all wonderful. There are quite a variety of options too to choose from, so don't hesitate to stop in and make your day better and your taste buds happy. Enjoy!
