Nightingale Bread Introduce
Introduction / Overview
For residents of Colorado who appreciate true artisan craftsmanship in their daily bread, Nightingale Bread in Colorado Springs is much more than a simple bakery—it is a dedication to the ancient and meticulous art of baking. Located in the heart of the city, this establishment has quickly become a local legend, revered for its commitment to quality ingredients, traditional methods, and, most notably, its mastery of naturally leavened sourdough.
What sets Nightingale Bread apart is its deep commitment to the process, starting literally from the ground up. They proudly use a sophisticated stone mill on-site to grind organic grains, primarily sourced from Colorado farms, into the freshest possible flour. This dedication to milling organic, heirloom grains in-house ensures a final product with unparalleled flavor, texture, and nutritional value. The resulting breads are naturally leavened, meaning they undergo a long, slow fermentation process that develops a beautiful, complex sourdough flavor and a crust that is both crisp and deeply satisfying. This commitment has earned them a passionate following, with customers readily queuing up for their daily loaves and renowned weekend specials.
Nightingale Bread’s setting is equally unique. Established in 2017 within a former classroom of the old Lincoln Elementary School, the bakery exudes a charming, humble, yet highly professional atmosphere. This history lends a special, local flavor to the experience, transforming a simple trip for bread into an authentic Colorado Springs outing. They expertly balance a wide variety of fresh bread and pastries with delightful food offerings, including specialty sandwiches and, notably, their highly anticipated Saturday pizza menu. It is an essential stop for any Colorado local seeking the very best in fresh-milled, handcrafted baked goods.

★ 5★ 4★ 3★ 2★ 1I love Nightingale. I get bread here often, and have tried almost all the pastries. I’m gluten intolerant, but for whatever reason I do great with their bread! Some reviewers noted that you typically have to stand outdoors in line for quite a while, and that’s true. However, for me that’s part of the charm and part of the experience. It means slowing down in life, enjoying the fresh air, being around people and chatting to a friendly person in line. We could all use a little less convenience and more of simply standing still these days. The breads are all fantastic, the pastries too delicious to resist, and the sandwiches crafted with detailed perfection. Everything is amazing! And as a bonus, the workers are always kind and calm.
September 27 · Alanna WinkelmanThe sourdough bread is a masterpiece. The pastries are great. But seriously, they have to get better at managing the line. It shouldn’t take 5 min for a single person to place a bread order.
May 30 · Joseph GruberTheir bread is fantastic. The employees are very friendly, and seem to genuinely enjoy working there. And the prices are quite reasonable. The hang-up for me is the wait time. If I decide to go to Nightingale, I have to assume that I'll be waiting in line for 30 minutes. I can't spare that much time most mornings. If they had a helper listening as orders were being placed and filling them before payment was made, they could minimize the lines (and the consequent parking problems). But there would probably still be somewhat of a wait, because the product is so good. It's just a shame because their product is so good.
September 06 · Simple TimThis place is awesome! They offer free sourdough starter if you bring your own container which was a pleasant surprise! I didn’t try any of their breads/pastries but they all looked fantastic.
July 31 · Matt CarlosAll their menu items are amazing. The cherry walnut bread was divine! And of course I never stop without getting a morning bun!
