I drove by late at night after a date. For being 1 in the morning it's a very well lit area. I loved the pictures and descriptions of desserts printed out of the table so I can see what was in the cake boxes. Lots of fun silly stuff too. Will come back with my daughter and get cake and treats for a picnic - Maggie Moldovan

Introduction / Overview

In a city celebrated for its unique culinary landscape, Pix Patisserie / Pix-O-Matic stands out as an emblem of Portland’s creative spirit, merging Old World French elegance with modern Oregon ingenuity. Located on East Burnside, this establishment is far more than a typical bakery; it is a full-fledged patisserie, dessert shop, event venue, and wine store, all rolled into one highly acclaimed location.

Pix Patisserie first captured the attention of Portlanders and international critics alike with its exquisite French-inspired desserts, including a stunning array of macarons, petit fours, and full-sized cakes. Over time, it developed a reputation that extends beyond pastries, largely due to its commitment to pairing fine desserts with an equally fine beverage program. The selection of Champagne and Sherry, in particular, has earned the business numerous accolades, winning the World’s Best Champagne and Sparkling Wine List award for multiple consecutive years.

What makes this Portland institution particularly unique and fitting for the "OG PDX meets modern convenience" crowd is the Pix-O-Matic. This refrigerated vending machine, available almost 24 hours a day, allows Oregon residents to satisfy a sudden craving for a high-quality French dessert, a box of house-made chocolates, or even a can of craft beer, at virtually any hour. This blend of classic French craftsmanship and quirky, round-the-clock Portland accessibility makes Pix Patisserie a destination that truly exemplifies the best of the city's food culture. It identifies as women-owned and maintains an inclusive atmosphere, proudly acting as an LGBTQ+ friendly and Transgender safespace.

  • Coteaux du Layon

In the Loire Valley of France sits this AOC for sweet white wines made from chenin blanc. The grapes are harvested very ripe, often developing noble rot or partially drying on the vine. Bonnezeaux and Chaume have their own AOC’s within the Coteaux du Layon and the crème de la crème, Quarts de Chaume, is its own AOC within the Chaume AOC.

  • Sauternes

This well known dessert wine comes from Bordeaux, France. Here, sémillon and sauvignon blanc grapes have their sugars and acidity concentrated when the fungus botrytis cinerea attacks. This phenomenon, known as Noble Rot, results in sweet wines of great complexity. Sauternes was part of the great 1855 classification of Bordeaux houses - Deuxièmes Crus Classés (Second Growths), Premier Crus Classés (First Growths) and a sole Premier Cru Supérieur (Superior First Growth)… Château d'Yquem.

  • Tokaji

A Hungarian sweet wine from botrytis affected grape varietals furmint and hárslevel?. Aszú is the sweet, concentrated juice from botrytized grapes and it is added to a regulated portion of base wine. The amount of Aszú in the final wine is measured from 1 to 6 puttonyos, with 6 puttonyos being the sweetest and richest. A wine over 6 puttonyos, with sugar levels of 180 – 450g/l, is called Aszú Essencia. Aszú Essencia is made only in the best vintages and ages very well.

  • Beerenauslese / Trockenbeerenauslese

Germany produces some of the most sophisticated and complex sweet wines of the world. Beerenauslese is made from carefully selected late harvest grapes, usually affected by noble rot. Trockenbeerenauslese is made from the ripest grapes, all which have been effected by noble rot. While these wines contain lots of sugar, the cool German climate keeps the acidity high and the wines perfectly balanced.

  • Dr. Loosen, Beerenauslese 2006
  • Dr. Loosen, Bernkasteler Lay Trockenbeerenauslese 2005
  • Sélection de Grains Nobles

Most notably from Alsace with similar wines made in other areas of France, these wines are made from hand selected grapes affected by noble rot. Concentrated flavors with a nice acid backbone.

  • André Kientzler, Riesling Geisberg Grand Cru 1989
  • Jean-François Ganevat, Sul Q
  • Léon Beyer, Sélection de Grain Nobles Gewürztraminer 1989
  • Ice Wine

Wine made from frozen grapes. The frozen grapes are pressed and the ice removed, thus concentrating the flavors of the musts left over. The freezing can be achieved on the vine in very cold climates or you can simulate the same process by putting grapes in a freezer right after harvesting.

  • Late Harvest Wines

These wines are made from grapes left on the vines past the normal harvest period. They dry up like raisins before they are picked which concentrates their sugars.

  • Dried

Drying grapes, usually by lying out in the sun, concentrates their sugars to produce sweet wines. This type of wine is produced all over the world. Passito, Recioto and Vin Santo are dried grape wines styles from Italy. Vin de Paille is a wine made from grapes dried on straw mats in the Jura region of France. Ruppu comes from the French island of Corsica.

Vins Doux Naturels are sweet French wines made by stopping the initial fermentation early with the addition of high strength alcohol, thus leaving some unfermented sugar.

  • Pineau de Charentes

In the Cognac region, Pineau is drunk as an apéritif. It works equally well with desserts with nuts or dried fruit. Pineau is made by adding Cognac to naturally sweet unfermented grape juice.

  • Ratafia

Sans bubbles, Ratafia comes direct from the Champagne region where neutral spirits are added to fermenting Champagne grapes, stopping fermentation and leaving some natural sugar. Monsieur Selosse went the extra mile, combining five vintages in a barrel and leaving it outside exposed to the elements for about 11 years, originally seeing if it would develop flor like a Sherry. Consider it an olorosso Ratafia!

  • Marsala

Marsala gets its name from the town in Sicily it surrounds. Marsala wines are fortified with alcohol. This was originally done for the wines to survive long voyages to England in the 1700’s. Not to be missed are the marsalas from Marco de Bartoli, perhaps the most innovative producer in the area.

  • Madeira

Made on the Madeira Islands, part of Portugal but far off its coast, Madeira wines were fortified and shipped across the world in the 1800’s. During this voyage the wines were exposed to the sun’s heat and ocean’s air, cooking and oxidizing the wine before it got to the new world. The resulting wine was very popular and now Madeira is intentionally heated and oxidized after fortification, producing flavors of dried fruits, nuts and caramel. The wines vary in sweetness. The Sercial grape produces the driest style, Verdelho medium dry, Bual medium sweet and Malvasia the richest. Terrantez tends to be medium dry but is not produced much today. Vintage Madeira aged more than 20 years in cask is called Frasqueira.

  • Port

Port is a fortified wine made in the Douro Valley in Portugal. It is made mostly with red grapes in a variety of styles but a small amount of white port is also produced. Ruby Ports are bright and fruity. Quality Tawny Port ages in wood for a period of time and oxidizes slightly resulting in lighter color wines with more nut and chocolate aromas than fresh berries. Colheita Port comes from a single vintage and is aged in wood (minimum 8 years) just before bottling. The resulting wine is similar to a Tawny Port but with more complexity. Vintage Port is bottled early (after just 18 months - 3 years) without filtering. It requires long periods of time in the bottle to go from full, rich and tannic to softer, more complex wines.
