SEYLOU LLC Introduce
Introduction / Overview
For Washington, D.C. residents seeking the pinnacle of artisan baking and a true farm-to-loaf experience, SEYLOU LLC, often simply known as Seylou Bakery & Mill, stands as a revolutionary force in the local food scene. Located in the vibrant Shaw neighborhood, this establishment is unique in the District of Columbia as the first and only bakery to operate its own in-house stone mill. This commitment is the foundation of their entire philosophy: delivering maximum flavor, nutrition, and texture by grinding 100% whole grains fresh on-site.
Seylou is far more than a conventional bakery; it is a mill-to-table operation built on a deep commitment to traditional techniques, regenerative agriculture, and sustainability. Every product, from their acclaimed sourdough loaves to their flaky croissants and unique pastries, is made with freshly milled, organic whole grains sourced exclusively from the Mid-Atlantic region. This approach bypasses refined white flours entirely, resulting in loaves that are darker, denser, and incredibly nutrient-dense, yet moist, tender, and complex in flavor. It’s a mission to change the way D.C. thinks about and consumes bread, making Seylou a must-visit destination for the health-conscious consumer and the true bread connoisseur alike. Patrons consistently rave about the friendly staff and the exceptional quality that results from this meticulous, grain-focused process.

Features / Highlights
What truly sets SEYLOU LLC apart in the competitive Washington, D.C. food landscape is its dedication to an artisanal process that controls every step from grain to loaf.
The standout features and highlights include:
UL
LI On-Site Stone Milling: SEYLOU is the only D.C. bakery with a stone mill to grind 100% of its flour in-house daily. This ensures maximum flavor, nutrition, and freshness, as the beneficial oils in the grain germ do not have time to go rancid.
LI 100% Organic Whole Grains Only: The bakery proudly uses no refined white flour. All products, including croissants and baguettes, are made entirely from whole grains, including heirloom wheats, einkorn, spelt, emmer, and rye, which are more nutrient-dense and easier to digest for many people.
LI Locally Sourced and Regenerative Focus: Grains are exclusively sourced from a network of Mid-Atlantic farmers who practice regenerative agriculture, supporting soil health and the local economy. On any given day, they may use about two dozen varieties of grains and pseudo-cereals.
LI Traditional, Long Fermentation Baking: All loaves are made using a sourdough starter (levain) and undergo a long fermentation process, which unlocks the nutritive potential of the whole grains and develops complex, deep flavors.
LI Wood-Fired Oven: All breads are baked in a custom-made, Spanish-built wood-fired oven, which imparts a unique crust and contributes to the overall rustic, deep flavor profile of the products.
LI House-Made Syrups and Specialty Drinks: The commitment to quality extends to their coffee and tea program, which features house-made syrups in flavors like blackberry, vanilla bean, and lavender, enhancing their carefully sourced coffee and unique tea blends such as Fortifying Tea and Floral Blend Tea.

What is Worth Choosing
Choosing an item at SEYLOU LLC is an experience guided by the principles of fresh milling and whole grain mastery. For any D.C. resident, the clear choice to begin with is the rye sourdough or the classic Pain au Levain. Customers frequently cite the profound difference in taste—fresh, complex, flavorful, and made from grains milled moments before baking—as a reason to choose Seylou’s loaves over any other in the city. The loaves are incredibly hearty, with a beautiful crust and a moist, tender crumb, showcasing the skill of the long fermentation process.
Another must-try is any of their 100% Whole Wheat Croissants. These items challenge the notion that whole grain baking must compromise on lightness. Whether opting for the plain croissant or the chocolate version, customers are delighted by the flaky texture and the rich, nutty flavor that the freshly milled whole wheat provides, a significant upgrade from the standard white-flour versions found elsewhere.
Finally, for a complete experience, pair your pastry or bread with one of their specialty coffee or tea drinks. The Coffee or Espresso is made with freshly ground beans, and the option to add house-made, inventive syrups ensures a thoughtful and unique beverage. Choosing Seylou is not just choosing a baked good; it’s choosing a product that supports local agriculture, respects tradition, and delivers an unparalleled level of freshness and nutrition to the District of Columbia. It is a genuine local gem that truly changes minds about what bread can and should taste like.

★ 5★ 4★ 3★ 2★ 1Amazing fresh pastries made from their in-house whole grains. No white flour! Loved everything I tried! They also make their own coffee and tea syrups from scratch. BlackBerry, vanilla bean, lavender, etc, etc. Coffee is fresh group and wonderful. Sophia is a delight. You can tell she loves what she does! Have come everyday I have been in DC. They are closed on Mondays so I stocked up on Sunday…. I am smiling as I post this and savor every bite and sip…
August 17 · Daniel “George” DaviesIf you think you’ve had good bread, Seylou will change your mind. A Must-Visit in DCFriendly staff, incredible bread, and pastries that look as good as they taste. The rye sourdough is outstanding fresh, flavorful, and made from grains milled right on site. A real gem in the nation’s capital!
August 15 · Noam IsraelAbsolutely amazing pastries with friendly staff and a great atmosphere. We ended up getting what she called the french onion soup pastrie (but i think it's real name was something else) and it was wonderful. Super rich with strong cheese and layers of well cooker onion that were just underneath. The bread itself was fluffy and a bit chewy as well. The staff was super friendly, great with recommendations, and was able to heat up our pastrie pretty fast. The atmosphere is bright with lots of natural light coming in and a sleek design. The seating fills up fast but the line wasn't too long.
March 23 · Conner JollyGreat bread, but nothing too special about the pastries. They claim very novel flavors but you can't taste those ingredients. Their muhammara danish tasted more like bell pepper paste than the tang of muhammara, for instance. The kale/cheddar scone wasn't balanced and more bitter from the kale than it should have been. Corn breton was great, but in that it was basically a southern corn cake, not a twist on the classic. The cinnamon roll is nothing special. Plus:1) They don't list their prices in the store. You just are charged what you're charged2) If you want your pastry warmed, it's a whole song and dance
September 13 · Anagha UppalThis place is like a warm hug every time I go. Their pastries and delicious, clearly made with great care. My all time favourite are their savoury scones, I take as many as are available because they ran out fast! Pizza night is a delight as well and you should def try it! The staff is very kind and there is a family feel to the atmosphere 🥰
