- Artisan Sourdough Focus: The bakery's true specialty lies in its sourdough. This method is used to create rustic, deep-flavored Breads like the highly celebrated Garlic & Olive Sourdough Loaf and the popular Jalapeno Cheddar Sourdough Loaf. Crucially, the sourdough technique is also applied to their unique croissants, resulting in an exceptionally light texture that customers describe as "absolutely delicious" and surprising for its airiness.
- The Croissant Collection: State Flour offers an impressive and inventive variety of croissants that go beyond the basic. Key highlights include the fan-favorite Almond Croissant (filled with a frangipane mixture), the tropical Guava Croissant, the rich Butterscotch Creme Brûlée, and the inventive Pistachio Croissant. For savory tastes, they offer the hearty Bacon Egg Cheese Danish.
- Unique and Sought-After Pastries: The bakery carries the hard-to-find Kouign-Amann, a caramelized, buttery pastry that is considered a must-try. What is Worth Choosing
If you are located in the Florida region, particularly near Tampa, State Flour Bakery should be at the very top of your list for artisan baked goods. The overwhelming consensus from local patrons is that the quality and authenticity of their products are virtually unmatched, positioning them as a premier baking establishment. The true value proposition here lies in the skillful application of sourdough across their entire repertoire, yielding unique textures and depths of flavor you won't find at a standard bakery.
First and foremost, the sourdough breads are absolutely worth the trip in and of themselves. These rustic, crusty loaves are not merely staples; they are expertly crafted centerpieces. The Garlic & Olive Sourdough Loaf is a consistent customer favorite, celebrated for its robust flavor—one local suggested it's "even better toasted with an olive oil drizzle." For those seeking a bit of heat and savory richness, the Jalapeno Cheddar Sourdough Loaf is a bold, flavorful choice that perfectly illustrates the bakery's creativity.
The second essential category is their unparalleled selection of croissants. Customers are often surprised by the lightness of these pastries, despite their size and generous filling, proving that the sourdough method actually enhances, rather than weighs down, the delicate layers. A must-try is the Almond Croissant, which is frequently highlighted for its delicious, buttery taste and perfect frangipane filling. For a taste that truly reflects Florida’s tropical sensibility, the Guava Croissant is a unique offering that blends traditional French technique with local flavor. The exotic Pistachio Croissant and the decadent Butterscotch Creme Brûlée round out a collection that is described as being "really close" to pastry perfection.
Beyond the signature bread and croissants, State Flour is one of the few places where you can reliably find the Kouign-Amann, a specialty pastry known for its intricate, caramelized layers. Other savory morning choices like the Bacon Egg Cheese Danish and the comforting Meatlover Quiche provide hearty, high-quality alternatives for breakfast.
In summary, choosing State Flour Bakery is choosing authenticity, quality, and a dedicated small business that puts craft first. The simple fact that they sell out regularly serves as the strongest possible recommendation from the community—a clear indicator that their freshly baked, delicious products disappear fast. To guarantee the best selection, especially of popular items like the Olive Roasted Garlic loaf or a variety of croissants, you are strongly advised to go early in the morning or utilize their convenient in-store pickup option. For Tampa locals, State Flour Bakery is more than just a place to buy bread; it’s a commitment to supporting artisan excellence.

★ 5★ 4★ 3★ 2★ 1You could search the entire world for the perfect pastry and I assure you one from here would be really close. Whether you choose the unique kouign-amann or an almond (or pistachio or guava) croissant, you'll fall in love with this bakery for it's quality and authenticity. The rustic sourdough breads are worth the trip in and of themselves.
September 15 · Ricardo Gonzalez, M.D.I'm very late to the game on this one. It's a sourdough bakery that I've been wanting to try for a very long time. It never appeared to be open the last few times I drove by it. Make sure you check the hours of operation on their website before making that special trip. With all of that said... Everything I tried was absolutely delicious! You would think that sourdough would be heavy in a croissant recipe. Not these croissants. They are light considering the size and amount of filling that's inside of them. I split all 4 of these croissants with my husband in a 2 day period. I bought 4 different flavors: Guava, Pistachio, Butterscotch Crème Brûlée, and Almond. All were very good, but my absolute favorite was the almond one that was filled with a delicious frangipane mixture. I could really taste the butter in each bite.I'm also in love with the Olive Roasted Garlic loaf. We're still sharing that one. It's even better toasted with an olive oil drizzle. I thought about getting the Cheddar Jalapeño, but I'll save that for next time.Everything is baked fresh daily. They sell more than just croissants & bread. There were scones, muffins, Kouign-Amann, cookies, and even a savory BEC danish. So many different flavors that it's so difficult to choose just one. I'm definitely going to try the Cuban croissant next time. Oh, and go early in the morning (or order ahead) if you're looking for something specific. They sell out regularly. It looks like I'll be adding a stop at State Flour to my list when running errands near the base. That list keeps growing.
July 20 · Karen VEverything in the display case looks like a piece of art — and thankfully, tastes just as good.I tried the almond croissant, chocolate croissant, pistachios croissant, brownie, and the kouign-Mann which were all perfectly flaky and rich without being too sweet. Best pastries I’ve had in a long time. The staff were kind, patient, and clearly passionate about what they do. They took the time to educate me on everything they had as well as their personal favorites! The portions are HUGE!If you’re a dessert lover or just want to treat yourself, this place is absolutely worth a visit
June 29 · Gavin RWe were searching for coffee and happened to come across this place.I found myself unable to resist the temptation and purchased a dessert for breakfast. The taste was wonderful, the quality was very high, and the croissants were enormous. We selected the pistachio and butter varieties 😊Highly recommend!
August 09 · Danielle sultana IncenseGreat takeaway bakery with superb scones and croissants. Rarely these two pastries are properly made, yet State Flour Bakery exceeded the normal options commonly found in the area. Yummy! No beverage service or seating, so plan on that
