Bakery ★5.0

522 2nd St SE, Charlottesville, VA 22902, USA

5.0
This is a baker without a bakery who knows how to bake. What's most intriguing are Chris' flavor combinations, which are always bright and beautiful. Tres leche w/ local poached fruit, and the coconut rice pudding are my two favorites. But the menu is vast for a one-person team, with the maiz-based cookies as a favorite of my wife, among many others I know. A++. - Jeff Dion

bakernobakery Introduce

Welcome to bakernobakery, a captivating and unique culinary venture that brings exquisite, Latin-inspired artisan pastries to the Charlottesville, Virginia community. True to its clever name, this isn’t a traditional brick-and-mortar storefront but rather a vibrant microbakery concept, known for its frequent pop-ups, farmer’s market appearances, and specialized pre-orders. This model allows the owner, Chris Martin, to focus entirely on the artistry of the baked goods and the sourcing of high-quality, local ingredients.

Chris Martin is a talented baker with a stellar background, having worked in fine dining and even at prestigious Michelin-starred establishments. However, she pivoted from that intense environment to pursue an entrepreneurial path, bringing her high-level technique to the comforting, vibrant flavors of Latin American and Hispanic desserts (or postres) and sweet breads (pan dulce). This shift was a return to her roots, with her grandmother being from Nicaragua, and it has clearly resonated with the Virginia food scene.

What truly sets bakernobakery apart is the commitment to a “closed loop” system: utilizing local flour, backyard eggs from their own chickens, and seasonal produce and herbs cultivated from their own garden beds. This hyperlocal sourcing philosophy, coupled with Chris's bright, inventive flavor combinations, has quickly earned a reputation for being one of the most exciting and delicious offerings in the region. As one satisfied customer review put it, the menu is "vast for a one-person team," and Chris's unique flavor pairings, like a Tres Leches cake with local poached fruit, are always "bright and beautiful."

This business proudly identifies as Latino-owned, LGBTQ+ owned, and women-owned, reflecting the diversity and inclusivity of the modern Virginia entrepreneur landscape.

Location and Accessibility

As a "microbakery" or pop-up panadería, bakernobakery does not operate from a fixed, daily retail location, but rather a central production base and various community points of sale.

The model is inherently designed for a quick visit, whether you are picking up a pre-order or grabbing a selection from a market stall. The business also actively maintains an LGBTQ+ friendly environment, welcoming all members of the community.
