Brake Bread Introduce
**Introduction / Overview: More Than Just a Bakery—It's a St. Paul Institution**
For Minnesotans who value high-quality, ethically-sourced food and a strong sense of community, **Brake Bread** in St. Paul stands out as a true local gem. This is not your average corner store; it’s a dedicated **Bakery** founded on the three core principles of bread, biking, and building community. Nestled in the vibrant West 7th neighborhood, Brake Bread has earned a loyal following for its exceptional, naturally leavened (sourdough) bread and delightful traditional pastries.
The philosophy behind every loaf is simple yet profound: everything is baked from scratch with an intense focus on using locally-sourced, certified organic, or regenerative grains grown within hours of the bakery. This commitment means that every purchase directly supports Minnesota farmers and millers, fostering a healthier, more sustainable food system right here in the Twin Cities. The bread is crafted using a wild yeast starter over a patient 36-hour process, which not only enhances the flavor but also aids in digestion and provides a lower glycemic index.
While Brake Bread famously started as a subscription-based bakery making zero-emission deliveries by bicycle—a service that dramatically reduces car trips and highlights their commitment to sustainability—they also welcome everyone at their retail space. As local customers attest, the bakery’s popularity often draws a line of people waiting patiently for a fresh, warm treat, proving that the high quality and community spirit are well worth the anticipation. The atmosphere is warm, the staff is kind, and the entire experience is authentically St. Paul.

★ 5★ 4★ 3★ 2★ 1On a Saturday morning as I was parking, I saw there was a line in front of the cafe - people standing in the cold to order, and I knew it had to be good. The sesame seed baguette was fresh and tasty. Waiting to try the whole wheat bread that's sitting in our pantry.
February 22 · Smruti KimitchRandomly drove past and decided to stop for a treat—didn’t even get to my car before diving in! Loved my afterschool special cookie and cardamom spinner. Enjoyed both with an iced almond latte. Staff was kind and an appropriate level of chatty.
June 21 · Jenna SkinnerI'm a sucker for a good danish and by looks alone, this one passed the test. There is a wonderful crunch from the puff pastry followed by a perfect balance between the blueberries and cream cheese. Everything stands out in its own way which makes this an excellent danish! I also got a loaf of their sourdough to share with others. This was absolutely fantastic too! Their walk up to-go style of ordering is super convenient especially when everything is on display in front of a glass window. I don't think you could go wrong with whatever you end up buying here, and I wish I could've tried one of everything!
October 28 · CJFinally tried eating in the school bus & enjoyed it.
September 06 · Tavia ParkerGreat bread, tasty pastries, nice vibes. They have a patio seating and the Bread Bus, a repurposed bus with heating and AC, to sit down and enjoy the space: no WiFi and board games. For sweetes, I recommend to try the almond scone and the scone.
