Independent Baking Co Introduce
Independent Baking Co: The Heart of Authentic Baking in Athens, Georgia
For residents of Georgia, particularly those in the Classic City, Independent Baking Co is more than just a place to buy bread—it is a cornerstone of artisan baking. Located in the historic Five Points neighborhood of Athens, this small, independent bakery is celebrated for its uncompromising commitment to quality, utilizing traditional methods and milling its own whole grain flours in-house. Locals know that getting there early is key, as the fresh loaves of bread, pastries, and the highly-recommended Morning Roll sell out quickly.
Introduction / Overview: From Grain to Grandeur
Independent Baking Co. is defined by its dedication to the fundamental ingredients of bread-making: high-quality organic grain, time, and natural fermentation. The bakery’s mission is simple: to provide the community with healthful, hearth-baked loaves and delicious European-style pastries, reminiscent of bakeries found across Italy or France. They stand apart in Georgia by actively milling their whole grain flours in-house using stone mills, a process that preserves the flavor, aroma, and nutrients of the grain, resulting in a distinctly superior product that is often easier to digest.
The core offerings are two-fold: naturally leavened (sourdough) breads and viennoiserie (laminated dough pastries). Their signature sweet pastry, the Morning Roll, is a particular point of pride and a local must-try. Described as a cinnamon roll made from croissant dough, it is rolled up with cinnamon sugar and dipped in more cinnamon sugar immediately after coming hot from the oven, providing a less sweet, more croissant-like experience that has a "perfect smell and the texture."

Features / Highlights
Independent Baking Co. distinguishes itself in the Georgia food scene with several key features:
- In-House Stone Milling: A rare and significant feature; the bakery mills all its whole grain flour on-site from organic grain, a process that maximizes flavor and nutritional value, setting their bread apart from almost any other in the region.
- Authentic European Quality: Customers frequently compare the quality of their pastries and bread to those found in Europe, particularly Italy, highlighting the flakiness of the croissants and the authenticity of the Pain au Chocolat and Olive Bread.
- Naturally Leavened Bread: Most of the bakery’s bread uses a natural fermentation process with a wild yeast culture and carefully maintained sourdough starter, resulting in bread that is delicious and easier to digest.
- Signature Morning Roll: This must-try treat is a celebrated local favorite, offering a unique texture and flavor that is highly recommended over traditional cinnamon rolls.
- Community Focus: The bakery is highly engaged with its local community, with a clear mission to provide healthful, hearth-baked loaves, and an owner/baker who is a Marietta, Georgia native.
- Daily Rotating Menu: The specialized bread schedule (e.g., Challah on Fridays; Sourdough Rye on Saturdays) encourages repeat visits and ensures the freshest possible products every day.

★ 5★ 4★ 3★ 2★ 1Independent has the most quality and authentic pastries and bread loaves I have ever had outside of Italy. I would highly recommend their chocolate croissant if you like something light, flaky, and chocolate-y. 😊 Their Olive Bread is a family favorite, and we love to eat it with a little butter on top. I have never been disappointed with any of their products and I’ve been a customer for years ❤️ Parking is a little difficult and I would not recommend taking more than 3 people inside with you due to the smaller size of the building.
May 03 · Salem✅ Recommend: Morning roll - perfect smell and the texture! Croissant is good too but not as impressive as the morning roll.❎ Not for me: Round bread - too hard for me. If you like hard crust; maybe this is for you.Perhaps the most famous bakery in Athens. My friends recommended me croissants and morning roll. Friendly staff and pretty store. Need to come early before they sold out!
March 27 · Justine LeeWe love this little place! Our kids love the chocolate croissants and we love every single thing we've tried, usually go there on the weekends to get fresh breads. They always have a smile on their faces and are super friendly, there is no pressure to get you to buy and get you out the door quickly, they also have a small terrace next to the running store so you can get your coffee and pastries and enjoy the people go by!
November 01 · Fernando RodriguezProbably the best freshly-baked goods in Athens. Parking is annoying but worth it. Traffic in the area is crazy. There isn't much seating inside. Great service. Great prices. Dont forget to try the bread, croissants, and cardamom bun.
September 19 · Mariya DanLast week I stopped by IBC in search of some good homemade Rye bread for our annual Corned Beef St. Patrick’s Day meal. The cashier recommended Sourdough Rye which is only made on SAT. I ordered 2 loaves for P/UP on SAT afternoon but I got tied up and did not realize they were open on SUN. So when I stopped in on TUES Peyton offered for me to pick out 2 loaves to replace the 2 loaves that I never received. Now that is excellent Customer Service! IBC will now be my go to Bakery. Check them out. Wonderful selection and they even have some great special roast coffee and other specialty items. Thx to Peyton and the entire IBC Team.
