For many New Yorkers, a bagel isn't just a breakfast item; it's a way of life. It's a culinary institution deeply woven into the fabric of the city. While the city is filled with classic bagel shops that have perfected the traditional chewy, boiled, and baked bagel, a new player has emerged on the scene, offering a refreshingly different and highly acclaimed experience. PopUp Bagels, with its location in the vibrant neighborhood of Williamsburg, Brooklyn, is quickly making a name for itself by prioritizing freshness above all else. This article is your guide to understanding what makes this spot a must-visit for any local bagel aficionado.
The PopUp Bagels story is a modern-day success tale, starting as a small, backyard pop-up during the pandemic. The founder, Adam Goldberg, a former flood mitigation specialist, began experimenting with a new bagel recipe, and the result was so good that it attracted a devoted following. This organic growth and dedication to a single, high-quality product is at the heart of the business. PopUp Bagels has even been recognized for its exceptional quality, winning "Best Bagel" at Brooklyn Bagelfest two years in a row. This recognition, combined with the glowing reviews from locals, speaks volumes about the quality and unique appeal of their product.
What sets PopUp Bagels apart from the pack is their unwavering commitment to serving bagels that are hot and fresh, straight from the oven. This is a game-changer for many, as it offers a texture and aroma that is simply unmatched. The bagels themselves are a little smaller than some traditional New York bagels, but they are dense, doughy, and have a wonderfully crispy crust. This combination of a hot, soft interior and a perfectly textured exterior is what keeps customers coming back. The experience is designed to be a "rip and dip" affair, where you receive a bag of warm bagels and a generous container of schmear, allowing you to enjoy them at peak freshness. This focus on immediate consumption is a key part of the PopUp Bagels identity and is a point of frequent discussion among its fans.
PopUp Bagels has a simple but effective business model, focusing on what they do best: bagels and schmears. You won't find a sprawling menu of deli sandwiches or other breakfast items here. The core offering is a variety of classic bagel flavors, including plain, everything, poppy, sesame, and salt. The spreads, or "schmears," are equally simple but executed with incredible care. The scallion schmear is a particular fan favorite, often described as fresh, tasty, and perfectly seasoned.
Beyond the everyday staples, PopUp Bagels has carved out a niche for itself by introducing a constantly rotating selection of specialty schmears and butters. This element of surprise and novelty is a huge draw for repeat customers. Past limited-time flavors have included unique and creative options like Lemon Poppy Butter, Brown Butter Cinnamon, and even collaborations with other brands. This weekly rotation keeps the experience exciting and gives regulars a reason to stop by and see what's new. Whether you’re a purist who loves a classic scallion cream cheese or an adventurer eager to try the latest inventive flavor, PopUp Bagels has something to offer.
The bagels are sold in packs, typically a minimum of three, which is ideal for sharing with friends, family, or simply stocking up for the week. The packs include a generous amount of schmear, so you can enjoy every bite without running out. This approach caters to groups and those who plan ahead, rather than individuals looking for a single bagel to grab on the run. While some customers note the lack of seating, the shop's focus is on takeout, making it the perfect spot to pick up a treat to enjoy at a nearby park or back at home. The speed of service, with orders often taken at the door, also ensures that even when there's a line, it moves quickly, so you can get your fresh bagels without a long wait.
In a city with a seemingly endless number of bagel options, PopUp Bagels stands out by doing things a little differently. They have taken the classic New York bagel and reimagined the experience, focusing on a minimal menu, exceptional quality, and an emphasis on freshness. Their community-driven start and consistent quality have earned them a loyal following, and their rotating specialty flavors keep the experience fresh and exciting for everyone who walks through the door.
If you're a local in Brooklyn looking for a new spot to get your bagel fix, or simply a New Yorker who appreciates a top-tier bagel experience, PopUp Bagels is an absolute must-try. Its unique approach and celebrated quality make it more than just another bagel shop—it's a destination for hot, fresh, and delicious bagels that capture the innovative spirit of New York's food scene.

★ 5★ 4★ 3★ 2★ 1I love their bagels. The salted bagel is my fave, but I also like the sesame and poppy bagels. I like the packages where you can get 3 or 6 bagels with 1 schmear or a dozen with 2 schmears. The scallion schmear is tasty and fresh. They also have special, limited time flavors of schmear or butter. I tried the lemon poppy butter and it's pretty good. Not many places to sit but they have a couple tall tables with chairs..more of a take out bagel place. I've gone twice so far and plan to make this my go to bagel place for now.
June 09 · Cliff JonesIf you want to try different flavors every week pop up is the best bagel in NYC! The bagels are always so hot & fresh and it’s always a fun experience ripping the bagel apart and dipping it in cream cheese! Highly recommend this place
July 19 · Vivian ShonThe bagels are amazing! Very fluffy and great taste! Multiple schmear flavors ranging from plain to some unique seasonal flavors. We order a package of 3-bagels and scallion cream cheese for a good price, quantity, and quality!!!You must try them!!!
July 08 · Pamela ChacónSo freaking good!!! The best bagel in my opinion. I dont need any cream cheese actually to enjoy the bagel! (They sell the bagel and cream cheese separately, not put in the inside of the bagel)
June 06 · helma devinaThis is a new bagel shop in Brooklyn and I was so excited to try it! The bagels were great and I loved all the different spread options! The staff was friendly and took their time explaining the spreads and helped me pick out a real yummy one! There was a sweet, young worker, Lucas, who was so helpful. The manager, Kaitlyn, was welcoming the customers. I will 100% go back!
