Sable was once referred to as “poor man’s sturgeon,” but don’t let the old moniker fool you. Spectacular osetra, the likes of which has not been seen for years. With its glorious dark amber to golden color; sensual mouthfeel and complex taste, this is a rare gastronomic experience. Supply is limited.
American Transmontanus
Chefs love this Caspian-style caviar with its large beads and dark brown hue. This caviar most closely resembles the look and feel of traditional osetra, yielding a wonderfully balanced palette and defined texture, and deep color with occasional golden striations. It is harvested for us from the white sturgeon of the Sacramento Valley.
Siberian Baerii
A fabulous discovery for caviar lovers. Hailing from the Siberian sturgeon, this osetra-style caviar has been produced under exacting and natural conditions. Its glistening medium-size beads have a firm texture and complex nutty flavor; color can range from dark to slightly golden.
Hackleback
Frequently referred to as “American Sturgeon Caviar” on restaurant menus, this caviar is found in the Mississippi River Valley and is a great alternative to the more expensive caviars. These small, medium-firm eggs range from black to dark brown, and deliver a mild buttery flavor.
Paddlefish

Tinned fish may be having a moment now, but they’ve been a staple of Russ & Daughters almost since our founding in 1914. Our great-grandfather, Joel Russ stocked his shop to the gills (pun intended) with a variety of them. During WWII, when metal shortages resulted in the rationing of canned foods, he kept an unmarked warehouse around the corner from his shop—a speakeasy for secret tinned fish transactions. The first business in america to have “& daughters” in its name, Russ & Daughters’ founder, Joel Russ, also called his three business partners — his daughters — the “queens of lake sturgeon.” The paper shopping bags had not been seen since the 1960s until one was recently exhumed by writer, humorist, and beloved Russ & Daughters regular, Calvin Trillin — who generously returned it back to the store 50 years after it was used. The rare artifact from the store’s history now hangs on a wall at Russ & Daughters Cafe, and was adapted for the paper shopping bags we use at all of our locations again. This shopping bag is reprinted according to the original wooden type letterpress technique that was employed in the 1940s. Each print is inked by hand and is entirely unique. Classic nyc institution for smoked fish and bagels. I went with the gravlax and veggie cream cheese with the “works”. The celery soda was tasty. And the cinnamon bun they was one of the best I ever tasted. Want to come back and try all their menu items!

I came here during the 5 borough bike tour which was happening on the same block and still was able to make it in! My wife and I enjoyed the classic lox and it was GREAT! We also bought Hamantaschen pastry that tasted very soft and delicious that we bought an extra one before leaving. From their bagel 🥯 down to the house made cream cheese everything was good and I could see myself coming back another time.

There's only really one reason to go to Russ and Daughters, fish. Don't get the bagels they are demonstrably worse (and smaller than most great NYC bagels). The line moves slower than any place you have ever been. And while the bagels may be artistically nice, the amount of lox is small, especially for the cost.They ride on a long and storied history, but definitely are testing on their laurels.

I ordered a poppy seed bagel with smoked salmon and horseradish/dill cream cheese, along with a drip coffee, and it was very delicious. The poppy seed bagel was very light and fresh, and the salmon melted in my mouth like butter. I actually came specifically to this location because the one in the city is a little hard for me to order from. The drip coffee was hot and strong, just the way I like it. 5 stars!

When you want a classic bagel with salmon think no more just go to one of the locations of Rush and Daughters. Everything sold here is fresh and incredibly delicious. There is lots of options to chose from and the prices are very reasonable.
