Introduction / Overview: Discovering Stone Bakery and the Ancient Art of Sangak
For residents of Maryland seeking an authentic taste of ancient culinary tradition, Stone Bakery on Rockville Pike offers a truly unique experience. This local establishment is not your average neighborhood bakery; it specializes in producing Nan-e Sangak, the revered national bread of Iran, baked using centuries-old techniques. Sangak, which literally translates to “little stone” in Persian, is a testament to culinary heritage, traditionally baked on a bed of small, hot river stones inside a specialized oven. This distinct process imparts a smoky, crispy-yet-soft texture and an elongated, irregular shape, setting it apart from any other bread in the region.

This whole-wheat sourdough flatbread is prized for its wholesome, nourishing qualities, being an excellent source of fiber and essential nutrients. Customers often discover the bakery due to the enticing aroma of fresh bread and are immediately impressed by the commitment to authenticity demonstrated by the friendly staff and the visible, specialized baking process. Stone Bakery ensures that their bread is baked fresh almost every day, guaranteeing the best experience for those looking to recreate a Persian feast or simply enjoy a healthier, more flavorful staple for their daily meals.

Features / Highlights
The unique appeal of Stone Bakery lies in its specialization and commitment to traditional, high-quality Persian flatbreads:
- Authentic Stone-Oven Baking: The most significant feature is the traditional method of baking on a bed of hot river stones in a custom-built oven, which gives Sangak its characteristic texture—a combination of thick, chewy regions and thin, crispy borders.
- Iran’s National Bread (Nan-e Sangak): The primary focus is Sangak, a whole-wheat leavened flatbread. It is offered in several varieties to suit different tastes and uses:
- Regular Sangak ($7.49): The traditional no-topping option, allowing the rich, whole-wheat flavor to shine.
- Sesame Sangak ($7.49): Topped with a generous layer of sesame seeds for added crunch and nutty flavor.
- Full Sesame Sangak ($8.49): An even more luxurious topping of sesame seeds.
- Special Sangak ($7.99): Often featuring additional toppings like poppy seeds or other traditional spices, although specific details may vary daily.
- Barbari Bread: The bakery also features other classic Iranian breads, such as Barbari, a thick, oval-shaped flatbread with a signature crispy crust, available in both Regular Barbari ($4.99) and Sesame Barbari ($4.99) varieties.
- Sourdough and Whole Wheat Goodness: Sangak is a whole-wheat sourdough flatbread, known for being high in fiber, having no cholesterol, and offering complex, deep flavors developed through the fermentation process.

What is Worth Choosing: The Authentic Sangak Experience
For Maryland food lovers, especially those living in or visiting Montgomery County, Stone Bakery is an essential choice for anyone seeking truly authentic, high-quality, and freshly baked Persian bread. What is particularly worth choosing here is the opportunity to taste Sangak baked in the traditional stone-lined oven, a rarity outside of Iran. This bread is far more than just a carb; it is a centuries-old cultural staple.

As one local resident noted after discovering the bakery, the aroma of the fresh bread and the manager's commitment to authenticity are undeniable proof of its quality. This is the ideal bread for a traditional Iranian breakfast (Sabzi Khordan), served warm with feta cheese, herbs, and walnuts, or as the perfect accompaniment to hearty Persian stews and the legendary Koobideh kebabs.

★ 5★ 4★ 3★ 2★ 1Last week, I discovered Stone Bakery just behind Duck Donuts. The beautiful oven caught my attention as did the smell of fresh bread. The manager was friendly and explained how everything is authentic, and when tasting it, I was convinced and impressed. I'll be back!
May 14 · Patrick SchoofThey have freash persian bread almost everyday
May 18 · Mary MassoumiYour search is over for sangak bread 🙌🏽 and for any other bread that you need for a meal. We pick up for breakfast and enjoy with fig jam (they sell an excellent brand) and crumbled goat cheese 😋. Buy too many because you can cut it, freeze it 🧊, and when it thaws, it'll be just as soft and tasty as when you first purchased. Big supporters of this local business 👏🏽 The staff is super nice and pleasant. Now that you're done reading this review, don't think just go. Get some good bread. #noregrets
