The Pastry Scool Introduce
The pursuit of world-class, authentic French pâtisserie does not require a trip across the Atlantic for residents of Southern California. Nestled in the heart of Tustin, Orange County, is an establishment that perfectly marries culinary education with exquisite, ready-to-eat desserts: The Pastry School, which operates a retail-facing pastry shop often known as ST Pâtisserie Chocolat. While its name suggests a purely academic focus, this location is, in fact, a hidden gem for local dessert enthusiasts who crave high-quality, technically brilliant European pastries.
This establishment holds a unique position in the California dessert scene. It is not merely a local pastry shop; it is the culmination of world-renowned expertise. The shop is anchored by its founder, Chef Stéphane Tréand, a professional figure who brings an incredible pedigree directly to the Orange County community. Chef Tréand holds the prestigious title of Meilleur Ouvrier de France (MOF), the highest honor for craftsmen in France, awarded by the President. He is also a World Pastry Champion. This level of master craftsmanship is what elevates the products available here above the ordinary.
For California patrons, visiting this Tustin location is an opportunity to experience dessert art that is fundamentally different from mass-produced sweets. The pastries are repeatedly praised for being light and not overly sweet, a hallmark of authentic French technique which prioritizes balanced flavor and texture over heavy sugar content. The stunning visual presentation of the cakes, tarts, and other creations is consistently highlighted by customers, reflecting the artistic discipline inherent in French pastry. Customers often find themselves in a line even on a Saturday morning, a testament to the desirability and reputation for excellence that precedes the shop. The combination of an elite chef's guidance, a dedication to classical techniques, and an accessible retail front makes this a must-visit location for anyone serious about fine desserts in the greater Los Angeles and Orange County area.
The Pastry School (and its associated retail shop, ST Pâtisserie Chocolat) is strategically located in the central Orange County city of Tustin, making it easily accessible from various points across Southern California, including nearby Irvine, Santa Ana, and Costa Mesa.
The physical address is:
Address: 3057 Edinger Ave, Tustin, CA 92780, USA
Situated on Edinger Avenue, the location is part of a commercial area, typically offering sufficient parking and easy navigation for local drivers. While specific public transit accessibility information is not detailed in the snippets, the area is generally well-connected within Tustin’s street network. For the modern Californian consumer, the convenience extends to how they can pay for their delectable treats. The location accepts modern, touchless payment solutions, streamlining the process:
- Payment Convenience: Accepts NFC mobile payments, catering to customers who prefer quick, secure, and touchless transactions using their smartphones or smartwatches.
While the primary business entity is a 'Pastry shop' that is part of a larger culinary school, the available services focus on both retail indulgence and quick café needs for Orange County residents.
- Dessert Retail: Offering a selection of meticulously crafted French desserts, including intricate cakes, tarts, and small individual pastries (known in France as petits gâteaux).
- Specialty Pastries: Known for offering classic French pastries such as croissants (with the option to call ahead for large orders, suggesting high demand), and macarons, which customers have described as being of exceptional quality.
- Coffee Service: Provides coffee, allowing patrons to enjoy a complete French café experience by pairing a freshly made pastry with a beverage.
- High-End Confections: The association with Chef Tréand suggests the availability of other high-end confections like artisan chocolates (bonbons, tablettes) and sugar/chocolate sculptures, reflecting the comprehensive training offered by the school.
- Educational Services (Indirect): The location houses 'The Pastry School' itself, meaning that in addition to purchasing items, customers can often inquire about the premiere school for enthusiasts and professionals to develop their skills in the pastry and baking arts.
The appeal of The Pastry School/ST Pâtisserie Chocolat is deeply rooted in the extraordinary talent behind the counter and the quality of the product.
- World-Class Master Chef: The most significant highlight is the leadership of Chef Stéphane Tréand, MOF (Meilleur Ouvrier de France) and World Pastry Champion. This rare distinction assures customers of the highest level of technical skill and quality control, making the shop a destination for serious dessert lovers in California.
- Authentic French Lightness: The pastries are characterized by being light and not overly sweet, a critical feature for discerning palates who seek the authentic flavor profiles of traditional European desserts, as opposed to Americanized sugar levels.
- Exceptional Macarons: Customer reviews specifically call out the macarons as "very delicious" and "comparable to the Ladurée", positioning them among the finest available in the United States and making them a must-try item.
- Artistic Presentation: Customers are consistently impressed by the "beautiful presentation" of the cakes and pastries, which are treated as edible works of art, reflecting the high standards of the chef’s training philosophy.
- Dual Identity of School and Shop: The proximity of the retail shop (ST Pâtisserie Chocolat) to the educational facility (The Pastry School) means that customers are tasting products made under the most rigorous, professional instruction, often by students or graduates of the chef's program.
For Orange County residents wishing to plan a visit, inquire about special orders, or potentially look into the pastry school classes, the key contact details are available.
- Address: 3057 Edinger Ave, Tustin, CA 92780, USA
- Phone: +1-949-500-4807 (This number has been historically associated with the combined pâtisserie and school)
Due to the high demand, especially on weekends, potential customers looking for large orders, such as croissants, are advised by other patrons to call ahead to ensure availability and minimize potential wait times upon arrival.
For the California local, choosing The Pastry School (ST Pâtisserie Chocolat) in Tustin is an investment in a dessert experience defined by authenticity, technical mastery, and exceptional quality, justifying the non-cheap price point.
You should choose this dessert shop if you seek:
1. The True Taste of French Mastery: The experience is a direct line to a Meilleur Ouvrier de France—a designation of elite, nearly unmatched skill. This means every pastry, from a basic croissant to an intricate entremet, is executed with precision that is difficult to find elsewhere in the U.S. West Coast. This is the place to taste French pastry as it is meant to be.
2. Balanced, Sophisticated Flavors: If you are tired of overly sweet, heavy desserts, the focus on pastries that are "light and not overly sweet" is the most compelling reason to visit. This aligns with the modern consumer's preference for complex, balanced flavor profiles where the quality of the chocolate, fruit, or cream can shine through. The dessert is meant to be a delicate indulgence, not a sugar shock.
3. The Macaron Gold Standard: The specific, highly positive comparison of their macarons to the famous Ladurée is a strong indicator of their quality. For macaron connoisseurs in California, this Tustin spot offers an elite, locally accessible version of the delicate French treat, making it a worthy destination in its own right.
In summary, The Pastry School offers the Orange County community a unique opportunity to taste the results of world-class pastry training without the expense of international travel. It’s an elevated dessert shop where the price reflects the pedigree and the artistry of the culinary creations, making it a premier destination for high-end dessert lovers in Southern California. The visible queue on a Saturday morning confirms what the reviews state: for a taste of authentic, top-tier French pâtisserie, this Tustin location is worth the visit.

★ 5★ 4★ 3★ 2★ 1I thought this place was a pastry/bakery cafe but it's actually a pastry school. The chief is.Stéphane Tréand. He's supposed to be a renowned chef from France. The pastries are light and not overly sweet. Their macaroons though are very delicious, comparable to the Laduree. Price is not cheap though. Good dessert.**Checkout Insta @mrakusuma for more recommended places to eat**
June 22 · Arif KusumaArrived earlier at Saturday morning and the waiting to get in and the line was already there. The presentation was beautiful. Cakes were delicious and servers were all nice and pleasant. Will call ahead for large croissant order in the future.
April 21 · Joey KuoHands down, the best caramel butter macaroons I've ever eaten 👏 What a cute store. Everything looked amazing, almost to good to eat. The lady who helped us spoke four languages (that's amazing). #LocalGuides
August 27 · Nicole CooperHands down best pastry shop. Stéphane Tréand and his wife are amazing. Stéphane was awarded an M.O.F. best craftsman in France in 2004. They don't just hand this title out to anyone in pastry. You can pre order for the weekend (to make sure you get what you want) and they do cakes.. The pastries are delicate, crispy, flaky, decadent and worth ever penny. He teaches classes and they aren't cheap but you won't get these lessons anywhere else. Stop in and give it a try. I'm sure it'll be a home run for you and the family.
