Fressen Artisan Bakery Introduce
Introduction / Overview
Fressen Artisan Bakery, nestled in the vibrant neighborhoods of Northeast Portland, offers Oregonians a truly unique and highly authentic culinary experience. Far more than a simple cafe, Fressen operates as a dedicated bakery, a welcoming cafe, and a wholesale supplier, making its mark by specializing in high-quality artisan breads, pretzels, and pastries crafted in the traditional German style. This establishment is a passion project rooted in Old World techniques, founded by Edgar Loesch, whose baking experience was forged within the rigorous guild system in Bavaria, Germany.
For local patrons, Fressen represents a refreshing departure from common bakery trends, focusing instead on robust flavors and time-honored methods. The core philosophy here is to create "modern masterpieces with traditional methods," incorporating organic, local, and sustainable ingredients whenever possible. Crucially, the baking process utilizes minimal technology, with everything being prepared by hand. This dedication to craft is what draws Portlanders in—the desire for breads, particularly European-style ryes and the famously authentic pretzels, that are simply not found in most other local establishments. What you experience is a deep, true flavor that harks back to simpler, more flavorful baking from the 1700s and 1800s. The bakery provides an excellent spot for breakfast, a quick visit, or a relaxing dine-in experience, complete with quality coffee and a warm, community atmosphere.

★ 5★ 4★ 3★ 2★ 1How have I never been here before?! Authentic German baked goods. The pretzel sandwiches are legit. Can’t wait to make this a regular stop.
September 11 · Alex HasenohrFressen has an amazing atmosphere. The coffee came out quickly and tasted great. The cappuccino art was not very pretty, but the it did taste great, and to me that’s what matters. My wife got an iced latte with hazelnut flavor added, and that was seriously delicious. We split a breakfast bagel sandwich, which comes on a pretzel bagel. The honey mustard made the sandwich a little too sweet to me, but definitely a delicious sandwich. They also have a lot of breads and pastries which all look amazing
July 28 · WillWent for some pastries and bread with my German mom. The almond cake is superb, as was the almond croissant. The rye bread is beyond exceptional ( mom approved 😊) You can taste the love and quality ingredients and reminded me of bakeries in Germany. Service was quick, attentive, and friendly. Cute seating area. 10/10 will return. Thank you.
August 23 · Simone HeuerWonderful German bakery experience, the pastries pair so nicely with the medium roast German style drip coffee here!
August 24 · Paul BuchholzFressen Artisan Bakery is a true gem in Portland, and their pretzel baguette is an absolute standout. The perfect blend of a soft, airy interior and a crisp, salty pretzel crust makes it a unique and irresistible treat. Every bite bursts with rich, buttery flavor and that signature pretzel goodness. The bakery itself exudes charm, with friendly staff and a selection of beautifully crafted breads and pastries. Whether you're grabbing a quick treat or stocking up on artisan bread, Fressen never disappoints.
