Popup Bagels Introduce
In a city saturated with bagel shops, standing out requires more than just a good recipe—it requires a memorable experience. Popup Bagels has managed to do just that, creating a buzz that has made it a must-try destination for both locals and visitors alike. What started as a popular pop-up concept in Connecticut has now found a permanent home in Greenwich Village, and the hype is very real. This is a bagel shop that has leaned into its unique identity, offering a distinct style of bagel that is warm, soft, and perfectly chewy on the inside, with just the right amount of crust. For New Yorkers who are used to having their bagel choices cemented by loyalty and tradition, Popup Bagels offers a fresh and exciting alternative, a place that is worth the hype and the line that often comes with it.
The philosophy behind Popup Bagels is simple: focus on quality over quantity and create a delicious product that speaks for itself. Their approach is straightforward, eschewing a traditional deli setup for a fast-paced, walk-up window model. This keeps the focus squarely on the bagels, which are known for their sourdough tang and comforting warmth. They've also become famous for their creative and high-quality schmears, which elevate a simple bagel into a gourmet treat. A key part of their identity is a commitment to a specific texture and flavor profile that is different from the classic, super-crispy New York bagel, and this distinction is what has earned them a loyal and dedicated following. This article will provide a detailed overview for locals, helping them navigate the experience and understand why this viral sensation has found its footing as a cherished New York institution.
Popup Bagels is perfectly situated in the heart of Greenwich Village, a neighborhood known for its historic charm, artistic vibe, and proximity to Washington Square Park. The address is 177 Thompson St, New York, NY 10012, placing it in a prime location for high foot traffic and easy accessibility. The shop is just a short walk from the West 4th Street-Washington Square station, which serves the A, B, C, D, E, F, and M lines. This makes it an incredibly convenient destination for people coming from almost any part of Manhattan and beyond. The proximity to New York University and Washington Square Park also means it's a popular spot for students, professors, and park-goers looking for a quick and delicious bite. The location on Thompson Street places it among a variety of unique boutiques, cafes, and restaurants, making it part of a lively and engaging neighborhood experience.
For New York locals, accessibility is key, and Popup Bagels’ location offers just that. Whether you’re on your way to work, taking a break from classes, or simply enjoying a weekend stroll, a visit to this bagel shop is a breeze. The ability to grab a warm bagel and take it to Washington Square Park to enjoy is a quintessential New York experience that many locals appreciate. The walk-up window model, while sometimes leading to a line, is designed for efficiency and a fast-paced pickup, which is well-suited for the city’s on-the-go culture. The fact that it's located in a vibrant and well-connected neighborhood means it's not just a place for food, but a part of the local scene. This convenience and sense of place have helped solidify Popup Bagels as a local favorite, despite its relatively new arrival on the scene.

★ 5★ 4★ 3★ 2★ 1At first glance, the line may prompt you to walk away, but I promise it’s worth a shot! I came here while having this spot on my bucket list during my trip to NYC. I love bagels beyond measure, and these lived up to the hype. Not horribly crispy on the outside, but just enough for a little crunch. So so soft on the inside, and a delicious warm bagel. I’m a plain cream cheese girl at heart, but everyone recommends trying out the new flavors. Plus, Washington Square is a close walk so enjoy your bagels in the park(if you don’t mind homeless of course)! Definitely can’t wait to come back when I’m in NYC, and looking forward to them opening in Miami!
July 21 · lyla fariaTried their sesame bagel with chimichurri butter — and that was the highlight. The butter’s herby-garlicky flavor paired beautifully with the warm, crusty bagel. No seating, fast-paced pickup spot, but the quality speaks for itself.
May 26 · MaydonshootsI finally got to try Pop Up Bagels, and now I get the hype. These are not your standard deli bagels — they’re something in between a classic NY bagel and a sourdough roll, and honestly, that’s what makes them stand out.The outside has this perfectly crisp, almost blistered crust, and the inside is light and chewy without feeling dense. They’re meant to be torn, shared, and dipped — not stuffed with cream cheese and lox (though no judgment if you do).You order by the dozen, which I thought was a bit much at first, but once I tried them with their scallion or honey butter spreads, it made total sense. These bagels disappear fast. The whole setup feels more like a weekend treat or something you bring to impress at brunch — not just a quick breakfast run. It’s definitely a different experience than grabbing a bagel from a local corner shop, but if you’re into small batch, high-quality carbs and thoughtful flavors, it’s 100% worth checking out.
April 09 · Benjamin HelwaAbsolute best bagel I have ever had. You can watch them boil, prep, bake. They come out fresh - steam coming out of them. SO delicious!!!! You have to buy a minimum of 3.
June 28 · Cheryl HensleyThey move fast! Worth the hype. You order recommended 3 bagels and only need one cream cheese. I got the sesame seed, poppyseed and everything bagel. Gotta eat it there where the bagels are still hot. I tried the special elote cream cheese which honestly only had a hint of the flavoring. Wouldn’t have minded trying the scallion cream cheese instead. The strawberry lemonade isn’t home made which I thought it was . Make sure you ask to see it first .
