All or Nothing Bagels Introduce
Introduction / Overview
For Tennessee residents searching for a truly transcendent bagel experience, All or Nothing Bagels in East Nashville is a game-changer. This establishment is not just a bakery; it's a revolutionary force in the Nashville culinary scene, specializing in wood-fired sourdough bagels that are unlike anything else in the Southeast. The entire operation, which is proudly 100% woman-owned and operated, is built on a simple yet uncompromising philosophy: use only the best ingredients, adhere to a meticulous, three-day process, and never take shortcuts.
The core of the menu is a celebration of the perfect bagel, made with only four simple ingredients: high-protein, organic cold stone-milled flour, barley malt syrup, fine salt, and water. By skipping yeast and relying solely on a natural fermentation process and the intense heat of a wood-fired oven, All or Nothing achieves a dense, chewy interior and a shiny, blistered crust that is the mark of an authentic, high-quality bagel. They are one of only two shops in the entire nation to utilize both the sourdough and wood-fired methods, making this a genuinely unique find for the Tennessee food enthusiast.
Operating out of a distinctive and welcoming orange and yellow Airstream trailer, the atmosphere is as vibrant as the flavors. Customers are invited to watch the bakers at work, with the wood-fired oven visible, creating a simple, welcoming, and entirely delicious environment that has quickly earned a loyal following in East Nashville and beyond.

- Inventive and Gourmet Schmears: Moving far beyond plain cream cheese, the homemade schmears, particularly the fan-favorite Calabrian Chili, showcase a dedication to full-flavor complexity and creative pairings.

What is Worth Choosing
For any resident of Tennessee seeking a truly exceptional bagel, All or Nothing Bagels delivers a highly-rated and memorable experience. What is absolutely worth choosing is not just a specific menu item, but the full, handcrafted experience. Start by recognizing the three-day process that goes into every single bagel, setting it apart from any other bagel in the region.
The consensus must-try item is the SEC Sando. The savory sausage, egg, and white cheddar combination is perfectly balanced by the unexpected, sweet, and tangy element of the apple butter. It’s an iconic local creation that embodies the bakery’s creative spirit.
For a simpler but equally intense flavor profile, pairing one of their classic bagels—especially the flavorful Rosemary Sea Salt or the impeccably seasoned Everything Bagel—with a generous serving of the Calabrian Chili Schmear is a highly recommended path. The spice and depth of the schmear provide a perfect counterpoint to the dense, sour notes of the wood-fired sourdough.
While the prices may be considered a premium for a breakfast item, the commitment to high-quality ingredients, the labor-intensive three-day process, the house-cured gravlax, and the signature wood-fired technique all justify the cost for a true gourmet indulgence. This is a destination for the bagel connoisseur, offering a taste that is, quite frankly, out of this world.

April 10 · Tatianna SpencerThis was my first time at All or Nothing - it’s worth all the hype and dare I say it deserves more. With a very simple menu, the bagels and flavors are anything but. I got the SEC All - an everything bagel with egg, sausage, white cheddar and apple butter. Yes you heard me right, apple butter AND white cheddar. The service is what you’d come to expect from a small business in East - super friendly people who want to know their patrons. Even if you live on the other side of town, this bagel is worth it. They even have their drip coffee in the classic Greek cups! The prices are steep at $17 for a sando and drip coffee but it’s a fun treat every once in a while. The orange and yellow airstream is situated next to a drum shop and you can watch them make the bagels in the oven right next to it. It’s simple, welcoming and delish. I’ll be back to try a bagel with their Calabrian chili schmear soon 🤤
February 23 · Sherrill ThompsonHip and trendy East Nashville spot conveniently located near a coffee shop and other east Nashville attractions but misses the mark on flavor.I admire All or Nothing Bagels for their creative specials and dedication to making and selling bagels out of this mini- venue but I don’t admire the flavor of these bagels. I ordered an everything bagel with chive cream cheese and was disappointed to find out that the bagel was hard (too chewy), too salty, and that the cream cheese was caked on too thick for eating. I came first thing in the morning so I know that the bagels were fresh and that my experience with the chewy bagel was due to their recipe and not because the bagel had been sitting out.Parking in this area is challenging to find if you are visiting during peak- hours. Additionally, the coffee shop next door is only available 8-2 Tuesday through Saturday. If you are visiting outside of these hours, you will not be able to grab a coffee with your bagel, as the shop does not sell any teas or coffee. They only offer water and coke in their outdoor cooler.
February 21 · Rylee Davy TaylorWent on a Saturday when it was fairly busy. Service was quick, and the employees were very friendly. Can’t control the weather, but I swear last time I was there, they had some type of awning to provide shade. I got an everything bagel with Calabrian chili schmear. The cream cheese was yummy, but I would not recommend the everything bagel, for it was abhorrently salty.
July 13 · kelsey hA dog friendly food truck with outdoor seating, on an easily walkable route. That’s all great, but one thing that stands out is the wood fired sourdough bagels.Especially the sprocket rocket on a rosemary bagel. It takes a few minutes to make, but what’s a few more minutes when you first taste it and realize it’s what’s been missing from your mouth your entire life. The layers and layers of egg, pesto, and smoked salmon are so well complemented by the toasted rosemary bagel, you just forget about breathing and focus only on eating because making sure those flavors stay in your mouth is the only thing that matters.
