Loxsmith Bagels Introduce
Introduction / Overview
For Washington residents in and around the Seattle area, Loxsmith Bagels has carved out a distinctive niche, moving far beyond the conventional bagel shop to become a beloved local institution and a true destination for artisan baked goods and gourmet fish. Located in the vibrant West Seattle community, Loxsmith Bagels is not just a place for a quick bite; it's a specialty restaurant that brings an innovative, West Coast sensibility to the classic appetizing deli experience. The shop is renowned for its dedication to quality, particularly its signature lox, which is cold-smoked in-house using flavorful, wild-caught King Salmon, a significant departure from the typically farmed salmon found elsewhere. This commitment to superior ingredients and meticulous, labor-intensive curing processes sets Loxsmith apart in the Pacific Northwest culinary scene.
Founder Matthew Segal, originally from Miami Beach, combined his passion for East Coast-style bagels—self-taught and perfected over years—with his professional background as a sushi chef. This unique culinary perspective is evident in the menu, which expertly fuses classic deli fare with creative Asian-inspired flavors, resulting in a selection of bagels and sandwiches that are both nostalgic and distinctly Seattle. Their bagels themselves are often described as having a unique, dark-brown, blistery, and chewy crust—achieved through a lye-boiling method, lending a slight pretzel-like quality—and a satisfyingly dense interior, meeting the high standards of bagel connoisseurs.
More than just a purveyor of excellent food, Loxsmith Bagels is a full-service restaurant experience, offering a range of dining options from quick takeout to comfortable dine-in service, making it a flexible and inviting spot for locals. The strong focus on unique smoked fish options, various homemade schmears, and creative, substantial sandwiches ensures that every visit offers something new to discover, appealing to both traditionalists and those seeking a bold, fresh take on the bagel.

What is Worth Choosing
For Washington residents seeking an elevated and expertly crafted bagel and lox experience, Loxsmith Bagels is undeniably worth choosing. The core of their appeal lies in the quality of their ingredients and the dedication to their unique, artisan process. The lye-boiled bagels offer a texture that stands out in the Seattle market—chewy on the inside with a crisp, dark crust—providing an ideal vehicle for their savory fillings. Their commitment to using wild King Salmon for their Nova Lox is a clear differentiator, resulting in a depth of flavor that gourmet food enthusiasts will immediately appreciate.
While the prices may reflect the use of premium, responsibly sourced ingredients and the labor-intensive production methods—positioning the offerings as a high-end treat rather than a common daily purchase for some—the quality justifies the cost for many patrons. The sandwiches, such as the classic Loxsmith and other inventive combinations, are substantial and made with a careful balance of flavors. Furthermore, the selection of specialty fish, like smoked sable and sturgeon, allows for a truly customized and deluxe experience not commonly found in typical bagel shops. Beyond the food, the shop’s actively inclusive and welcoming environment ensures that every customer feels comfortable and respected, contributing to its status as a positive community fixture in West Seattle. Whether you're an East Coast transplant craving an authentic taste of home with an inventive twist or a local looking for the best bagel the city has to offer, Loxsmith Bagels provides a compelling, high-quality, and creative culinary choice.

★ 5★ 4★ 3★ 2★ 1Best bagels in West Seattle. I can’t vouch for the bagel sandwiches, but their bagels with schmear are great. Great texture and a healthy amount of light fluffy schmear.
April 13 · Rachel WilliamsSolid lox sandwich, but not sure if it's $18 good. Maybe that's just the way of the world at this point. I'm originally from the Northeast (upper right) where good bagels are ubiquitous. I do have to say that these bagels are very good. Pricey, but good. The guy working the window seemed like he might be serving a community service sentence, or perhaps he was just hung over. But I was there for the product, not the service, so I won't ding them for the aloofness. (The person working the donut window next door was lovely and politely pointed me in the right direction, since the bagel window isn't as obvious.) Would I go back? Maybe. But at this price, these bagels seem more like a high end treat than a regular occurrence. Check it out for yourself. I didn't think you'll be disappointed.
March 09 · Jason L.best bagel i’ve had yet in seattle, very competitive prices for the quality of bagel and add-ons. service is on par with what you would want with a walk-up window bagel joint, lines up with the culture 🤌scallion cream cheese on everything, perfection
December 19 · Colin HammondI *REALLY* wanted this to be good. It’s so close to me, and I love bagels. I was so excited to get it home (everything bagel $3, scallion schmear $3, and red onion $.75). Was gonna doll it up with capers at home since I’m right around the corner.I opened it up to find the saddest schmear in the universe. Even after spreading it around to balance the singular small glop in the center, it wasn’t enough to go to the edges, and where it did, it barely did. THAT IS NOT A SCHMEAR.Four thin slices of red onion per bagel.I am sorely disappointed. My partners looked slightly better, but only enough for a very thin coat after spreading it around.I won’t be back. This made me really sad.
February 02 · Michelle FerrisWe tried Loxsmith Bagel for the first time this past weekend. Verdict: The bagels were so so good, so we are even more excited for their permanent Beacon Hill location to open. In the meantime, run, don’t walk to grab their bagels from their Bagel Bodega. We got two sandos: 1) B.E.C. on the egg everything and 2) Loxsmith with two modifications: sub everything bagel for the nori sesame and sub the listed smoked salmon options for the pastrami lox. I saw their Instagram post about pastrami lox on Saturday morning, and I had to get it. Oh my, the Loxsmith was just perfection! I am still dreaming about that sando. Why, you ask? Because the ratio and presentation of each component was thoughtful and intentional - no capers falling out, or red onion overpowering a single bite.
